The menu said they use 100% Korean beef intestine and daechang (large intestine), so my expectations shot through the roof. The rich, savory fat from the daechang mixed with the spicy, tangy sauce made the broth taste insane. The chicken had zero gamey smell, was chewy, and well-seasoned all the way through, so the soju just kept going down.
