Stone walls, arched structures, and soft lighting all combined to make it feel like I'd stepped into an old monastery's underground storage cellar.

Sudowonui Bimil Jeojanggo is a bar and restaurant located in the basement at 47-1 Samil-daero 17-gil, Jongno-gu, Seoul. The unique atmosphere started right from the entrance and I couldn't help but gasp.

It felt like a movie set, like a theme zone at an amusement park, and honestly like I'd actually landed in Europe — my heart was racing.

You pass through a narrow, long brick archway and go down the stairs, and that's where Sudowonui Bimil Jeojanggo appears.

## What does the medieval monastery interior look like?

Even the waiting area here was seriously exceptional.

They used the props so well, it was completely soaked in that medieval European feel.

The interior space was quite large too, with lots of big tables.

Stone walls, wooden tables, and warm lighting all came together for a really strong aura.

I have no idea how everyone found out about this secret spot, but it was packed.

With so many customers, the staff all looked busy, but the place was kept spotless, and it seemed like they clean the draft beer lines regularly too. No wonder the beer was so clean and delicious.

## Ordering Ribs Allowed After Confession, 500g bone-in

I had one of Sudowonui Bimil Jeojanggo's signature dishes, the ribs. The menu name was funny — Ribs Allowed After Confession. It really fit the shop's name, Sudowonui Bimil Jeojanggo (monastery's secret cellar).

Domestic chilled Korean pork from Majang-dong, low-temperature aged for 24 hours, seared on a char grill in a special barbecue sauce and finished in the oven! I ordered the 500g bone-in portion, and since meat loses weight after cooking, they seem to prepare more than 500g to account for that. The sous-vide-aged pork back ribs were grilled to medium or medium well.

It was the perfect generous portion for two people.

The big ribs come with a solid lineup of sides — french fries, coleslaw, pickles, and sauce.

## How does the sweet, savory barbecue sauce taste?

The ribs' surface was glazed glossy with barbecue sauce — just looking at it made my mouth water.

The sauce was just sweet enough and so delicious. It had a smoky flavor too — honestly pure honey!

The meat was cooked to a rosy pink and was incredibly tender.

There wasn't a dry spot anywhere, it was tender throughout, and completely fresh with no funky smell.

The juicy meat combined with the sauce's flavor was genuinely amazing. I started off eating slowly with a fork and knife, but ended up just picking it up with my hands.

If you ask for wet wipes through the tablet order, they bring them right away, so I'd recommend just eating with your hands comfortably!

Apparently the chef used to be a sous chef at a Hilton Hotel in New Zealand, and the taste really was on another level.

I've been really into dark beer lately, and it paired perfectly with the ribs.

I love the foam layer on top of a draft beer, and this one had just the right smooth, delicious foam.

A bite of ribs, then a sip of dark beer — the aftertaste was clean and it felt like real healing! Everything here seemed so well-managed that both the beer and the food were amazing.

On top of that, I was drunk on the atmosphere too, so it felt like a few times more fun.

## About 70 seats, room options and how long the wait runs

Sudowonui Bimil Jeojanggo has about 70 seats overall, with not just regular hall tables but bar tables and room-style spaces too. The private room fits about 10 to 16 people, and the open room fits about 8 to 10.

One alcohol order per table is required, so it's perfect for a drinking get-together. If a wait happens to build up, table time may be limited to 2 hours 20 minutes.

I went around 8:30 pm, and it was quite busy, but there was no wait the whole time I was there. On a Friday night or weekend, there might be a wait.
