## Shrimp and scallop bibimbap poke with vegetables

The shrimp and scallop bibimbap poke had more varied ingredients than I expected, so it was fun that the texture changed a little with every bite. The shrimp still had a springy bite, while the scallops were soft, and they worked well with the crisp vegetables. The seafood flavor was not overly strong, making the whole bowl pleasant and clean to eat. I chose plenty of vegetables. The sweet, refreshing flavor of green grapes and apple came first, followed gently by kale and wheatgrass. Lemon added brightness too, so it did not taste dull or overwhelmingly grassy.

Especially when I took a sip now and then while eating the shrimp and scallop poke, it refreshed my palate, so it paired nicely with the oil-dressed bowl too. Even if you usually find the strong taste of vegetable juice a little daunting, it should be relatively easy to drink if you like beverages with sweet-tart fruit flavor alongside them. That said, it will suit days when you want a relatively light meal with vegetables and protein better than days when you want an especially abundant, strongly flavored meal.
