When picking a lunch spot near Jongak Station, there's always one dish that keeps coming to mind. Personally, on days I'm craving sushi for lunch, I end up regretting it if I order something else instead. So this time I headed to Choe Uyeong Sushiya Jongno Tower Branch, right in front of Exit 1 of Jongak Station.

What stood out most about the sushi I had that day was the springy yet chewy texture of the white fish. Beyond just tasting fresh, you could taste the difference that aging makes, so I was satisfied from the very first bite.

Choe Uyeong Sushiya is located at 7 Jongno 5-gil, Jongno-gu, Seoul, in the basement of the Tower8 building. Since it's right in front of Exit 1 of Jongak Station, it wasn't hard to find even on my first visit. It's also a convenient location for anyone moving from the Jongno Tower area or Gwanghwamun for lunch, so it suits people who value accessibility when searching for good food near Jongak Station.

It's open daily from 11 a.m. to 9:30 p.m., with last order at 9 p.m. There's a break time from 3 p.m. to 5 p.m., so if you're visiting between lunch and dinner, check the hours first.

This time I ordered the 33,000-won premium sushi set. It comes with 17 pieces total, and the fish slices were thicker and bigger than I expected, so it was satisfying from the moment it arrived.

With sushi, the ratio of rice to fish quietly matters a lot. If the fish is too thin it's disappointing, but if it's too big it can feel disconnected from the rice. The sushi I had that day had a good balance between the fish and the rice.

Personally, what stuck with me most was the white fish sushi. I'd recommend starting your first piece with white fish. Along with the clean, light flavor unique to white fish, there was a springy, chewy texture — a bit different from just tasting 'fresh.' The umami and texture that come from aging added to it, and you could really feel the sushi's overall quality.

### How does it differ from the 27,000-won top-grade sushi set?

For reference, you can also order the top-grade sushi set for 27,000 won, which is good for fitting your lunch budget. Everything was the same except for 2 types of sushi. Uni (sea urchin) sushi isn't included in the top-grade set since it's pricier, but the top-grade set on its own really doesn't feel lacking. By the end, you're so full you won't even notice whether uni was there or not.

## The 14,000-won mixed kaisendon: best value for an office lunch

If you want a lighter lunch, I'd also recommend the 14,000-won mixed kaisendon (assorted sashimi rice bowl). Given the price, the fish was quite generous, making it an easy pick as a Jongak Station lunch option. The bowl comes packed not just with sashimi but also egg and fried shrimp, so it's filling enough as a single dish.

### How to eat the kaisendon at Choe Uyeong Sushiya

Rather than just eating fish on rice, trying kaisendon a few different ways turned out to be fun. First, I put rice on seaweed, added fish on top, and dipped it in wasabi and soy sauce to taste. Having the crisp seaweed, rice, and fish together gave a whole different feel.

Next I tried putting just the fish on seaweed, and the combo of crisp seaweed and fish worked really well too. You can also put fish on rice and scoop it up with a spoon like sushi, or lightly mix the fish, flying fish roe, and rice together for one bite. If you're looking for something clean but filling rather than a heavy lunch, I felt the mixed kaisendon was especially good.

## Fish texture, aging and which piece to eat first

What I want to emphasize most from this visit to Choe Uyeong Sushiya is the texture of the fish. It had a springy firmness that stayed chewy the more you chewed, so as the first bite it really woke up my appetite. The clean taste of fresh fish combined with the umami built up through aging, making each piece of sushi fun to eat one by one.

So if you're ordering sushi, I'd recommend not eating several kinds all at once from the start, but starting with white fish and moving on to red fish. Starting with the light, clean white fish and following it with other sushi made me feel the flavors and textures of each more clearly. Also, the premium sushi set's fish is thick and generously cut, so even one piece had a real presence in your mouth.

Overall, Choe Uyeong Sushiya tends to serve thick, generous cuts of fish, making it worth considering whenever you're looking for sushi near Jongak Station. It's easy to get to right in front of Exit 1, and with 2 hours free parking at the Tower8 building, visiting by car isn't a hassle either. Most of all, I liked that with solo seats and partitioned seating, it works well for solo lunches, meals with coworkers, and small gatherings alike.

If you love sushi, go for the premium sushi set; if you want something light but filling for lunch, the mixed kaisendon is a good pick. If I visit again, I'd start with the white fish sushi first — the springy, chewy texture and the flavor difference from aging really stuck with me.
