Crisp and salty on the outside, soft and rich with butter on the inside — no need to say more. Then I tried the mentaiko potato salt bread. Inside was packed full of what seemed like potato purée, overflowing to the point of nearly bursting, and the gamtae (roasted seaweed flakes) on top met the crispy grilled mentaiko (seasoned pollock roe) alongside the bread — it was genuinely delicious. The saltiness soaked into the potato brought out the bread's own flavor while the potato's taste also gave a real sense of satisfaction haha. ## Is Respire Bakery Cafe Seochon worth a second visit? That wraps up my review of Respire Bakery, the go-to spot for Seochon salt bread and Seochon brunch. Just sitting there felt like a healing session. It was a place where I genuinely got to feel that time-stopped kind of ease again after a long while. Watching summer turn to fall, and fall turn to winter, from a little forest café like Respire Bakery — I think that would be an unforgettable experience haha.
