Every time I passed Sindang Station, Jinseong Hanwoo Gopchang Sindang Direct Branch (진성한우곱창 신당직영점) was always packed with people. Whenever I went by, I thought, “This place must be seriously good!” and kept telling myself I had to try it. I finally visited in person this time!

To give you the conclusion first, busy places really are busy for a reason. From domestic Korean beef gopchang (small intestine) full of creamy filling to chewy Korean beef makchang (last section of beef intestine) and house-made kimchi, I enjoyed it all—and properly finished with kkakdugi fried tripe rice. It is right in front of Sindang Station, so getting there is easy too; after eating there myself, I understood why it was always bustling whenever I passed by!

## Right beside Exit 7 of Sindang Station: what is the atmosphere like?

Jinseong Hanwoo Gopchang Sindang Direct Branch is located right beside Exit 7 of Sindang Station. Being genuinely close to the station was one of its biggest advantages—it was so easy to find. It was bustling on the day I visited too! You write your name on the waiting board at the entrance and wait for your turn. There were waiting chairs in front of the restaurant, so I could sit and wait comfortably.

Once inside, the doors were left open, so even though it was indoors, it felt a little like an outdoor pojangmacha (Korean tent bar). The lively energy typical of a gopchang restaurant, plus that indoor tent-bar feeling, made it a comfortable place to eat with friends or acquaintances.

It felt a little incomplete to eat only gopchang, so I ordered makchang too. In the end, I was glad I did because gopchang and makchang have such different textures. And fried rice at the end is simply non-negotiable, right? 😆

After ordering and waiting a little, bottled water and the complimentary side dishes began arriving one by one. The first thing that caught my eye was pickled water parsley garlic sauce, also known as mijolma sauce!

Along with seasoned garlic chives, there were three kinds of kimchi made in-house with domestic ingredients: green onion kimchi, young radish kimchi, and gat kimchi (mustard leaf kimchi). Their very popular green onion kimchi was also available to take away! 700 g for ₩20,000.

When several kinds of kimchi come with gopchang, it is fun to alternate between them, and I loved that this place offered several types of house-made kimchi. After the rich, oily flavor of gopchang, pairing it with crisp, tangy kimchi made my mouth feel refreshed.

Steamed egg was included too, and it was nice to have something warm and soft alongside the meal. It was not just gopchang served on its own—the selection of sides to eat with it was impressively full.

## How did the filling-packed Korean beef gopchang taste?

The main event I had been waiting for finally arrived! Two portions of Korean beef gopchang and one portion of Korean beef makchang came out in a generous spread. Under the gopchang and makchang were napa cabbage kimchi, bean sprouts, cabbage, potatoes, rice cakes, and seasoned garlic chives, so it looked abundant from the moment it arrived. Looking closely at the gopchang, I could see it was packed with filling inside. Watching it turn golden made even the wait feel difficult 😂

After about five minutes, when the timer went off, a staff member cut the gopchang into bite-size pieces. It cooked a little longer, then it was ready to eat. The nicely grilled gopchang was golden on the outside and full of savory filling within! One bite brought that deep, rich gopchang flavor first, followed by a pleasantly springy texture. The more I chewed, the more savory it became—definitely the kind of flavor gopchang lovers would enjoy. It was especially good with bean sprouts, cabbage, or seasoned garlic chives, which added a crisp texture.

## How was Korean beef makchang different from gopchang?

I tried pieces of Korean beef makchang between bites of gopchang too. Makchang had a distinctly different appeal from gopchang. It browned beautifully on the outside and stayed wonderfully chewy the more I chewed. Going from rich, tender gopchang to bouncy makchang made alternating bites really fun because the textures were so different.

## The mijolma sauce and kimchi pairing

Another combination you cannot leave out at Jinseong Hanwoo Gopchang: pickled water parsley garlic sauce, or mijolma sauce. This sauce really does its part. Eating gopchang plain and soaking it generously in the sauce felt completely different. The fragrant water parsley, garlic, and chili in the sauce changed the flavor dramatically alongside the rich gopchang. In particular, the fresh aroma of water parsley cut through gopchang’s characteristic oiliness, making it feel cleaner to eat.

It is nice to enjoy the flavor of gopchang itself, but eating it with sauce or kimchi gives it another dimension! The house-made green onion kimchi and gat kimchi were especially good lightly placed on top of the gopchang. The rich savoriness of Korean beef gopchang met the crisp, refreshing kimchi flavor, and I just kept eating. My favorite combination was gopchang soaked in mijolma sauce with a little green onion kimchi on top. Since kimchi and sauce change the flavor after you have enjoyed the gopchang’s own richness, I recommend trying different combinations too 😊

After enjoying gopchang, you cannot skip fried rice at the end. I ordered kkakdugi fried tripe rice, one of Jinseong Hanwoo Gopchang’s dessert-menu items. At many gopchang restaurants, fried rice is cooked right on the griddle you have been eating from, but here they properly stir-fry the kkakdugi fried tripe rice on a separate griddle and bring it over. Maybe that was why it looked so appetizing from the start.

Best of all, it came topped with a soft-fried egg. Pop the yolk, then mix it through the rice, and that is it!

The crisp texture of kkakdugi (cubed radish kimchi), savory seasoning, and rich egg yolk made me keep reaching for it even though I was full 🤣 It is called a dessert-menu item, but visually it was almost main-dish level! It neatly wrapped up any lingering regret after the gopchang. Fried rice at a gopchang restaurant really has to be eaten until the very end for the meal to feel complete.

## If you are looking for gopchang in Sindang-dong

Jinseong Hanwoo Gopchang had always made me curious because it was crowded every time I passed Sindang Station! I kept thinking, “Is this a real hidden gem?” and telling myself I would try it someday, and I finally visited in person this time. As expected, busy places are busy for a reason. The domestic Korean beef gopchang was full of filling, savory, and pleasantly springy, while the Korean beef makchang became chewier with every bite, making it great to alternate with the gopchang.

There were also plenty of things to pair with the gopchang—house-made green onion kimchi, gat kimchi, young radish kimchi, seasoned garlic chives, and mijolma sauce—so I could enjoy different combinations depending on my taste. I was happy with the kkakdugi fried tripe rice at the end too, and left feeling full and satisfied from start to finish.
