I had dinner plans in Pangyo a while back, and it happened to be raining, so I found myself craving something with hot broth.

That's how I ended up at Okdengjang Seohyeon Branch, a well-known Korean restaurant near Seohyeon Station.

Walking inside felt like stepping into a traditional hanok (Korean-style house) — quiet yet warm, and quite striking.

On top of that, it boasted a really spacious and comfortable layout.

The basic side dishes were a tangy, sour scallion kimchi and a stir-fried kimchi cooked with pork.

The stir-fried kimchi, cooked with pork for extra savoriness, was great for a shot of soju before the main dish arrived. It was refillable too, so we could dig in without worrying about running out.

Finally, the main dish arrived — the medium size mixed sujuk hot pot (₩38,000)!

A clear, refreshing broth came piled generously with beef shank, beef tendon, and short ribs.

On top, crown daisy, minari, and red chili peppers made for a colorful visual, and glass noodles lined the bottom.

We also ordered kalguksu (knife-cut noodle) noodles on the side.

### The texture of beef shank and beef tendon

First, I picked up a piece of beef shank. Thinly sliced, it had a nice softness along with a nutty flavor.

Next, I tried a piece of beef tendon. It was bouncy like jelly, with a light, non-greasy richness.

The minari also kept its fresh fragrance while soaking in the broth beautifully — excellent.

Next I tried the glass noodles that had been sitting at the bottom.

The glass noodles had really soaked up the broth deeply, giving them a clean, excellent flavor.

I also tried the short ribs, which had a much thicker texture compared to the thinly sliced beef shank. The contrast between the two was fantastic.
