Daejeon is sometimes called the city of kalguksu (knife-cut noodle soup) because there are so many restaurants serving it, but it's not easy to find a place that nails all three things at once: a clean broth, chewy noodles, and good kimchi.

The place I visited recently was impressive on all counts — a deep but not overpowering broth, fresh noodles cut in-house, and kimchi that tasted just like freshly made kimjang (winter kimchi).

Today I'm sharing my review of Yongja 1, a kalguksu restaurant in Gwanpyeong-dong near the Hyundai Outlet in Daejeon — a great stop whenever you're craving kalguksu.

The first things you notice when you walk in are the steaming dumpling steamer and the clean, hygienic noodle-making station. You can watch the noodles being cut fresh right after you order, which naturally builds trust in the food. The overall interior has a warm, comfortable wood-tone atmosphere.

On weekday lunches, the place fills up with office workers from nearby, while weekends and evenings bring a wider mix — couples on dates and families with young kids.

The first thing set on the table after ordering was kimchi, served in a wide bowl. It's not an exaggeration to say kimchi is the lifeblood of a noodle restaurant.

Yongja 1's kimchi wasn't the heavily seasoned geotjeori (fresh unfermented kimchi) you often get at restaurants — it was salty yet clean, with real depth of flavor, just like freshly made kimjang kimchi.

It was so good that a bowl of freshly cooked white rice alone could finish off a whole plate of it, and it paired perfectly with the mild kalguksu.

The kalguksu broth was clean and mild, without an overly seasoned taste. The noodles, cut fresh in-house, were just the right thickness — not too thick, not as thin as somyeon (thin wheat noodles). That gave them a satisfying chewy bite, and the broth soaked all the way through.

The bibim kalguksu came with chewy, springy noodles topped generously with a spicy-sweet-and-tangy special sauce. It wasn't aggressively spicy but had a pleasant kick that whetted the appetite, and the crunchy garnish paired nicely with the chewy noodles for a fun texture.

### Kimchi steamed dumplings

The last dish out was kimchi dumplings. I'm normally a kimchi-dumpling person rather than a meat-dumpling person, and these were exactly my type. The wrapper wasn't too thick — thin enough that you could almost see the filling through it — and the filling had a good balance of crunchy kimchi and meat, releasing a mild savory juice with every bite. The dumplings themselves were fairly large, so even one or two felt filling.

### Portions are generous — pack leftovers yourself

Overall, the portions were very generous, so unless you're a big eater, finishing everything including the dumplings might be tough. But there's a corner of the restaurant with containers, rubber bands, and plastic bags neatly set up so you can pack any leftover dumplings yourself, no pressure to finish it all.

## Final thoughts

Yongja 1 Gwanpyeong Branch is a true kalguksu restaurant that gets the basics right — a deep broth, chewy handmade noodles, and kimchi with real depth of flavor. I'd recommend it if you want a clean, unfussy meal, or whenever you're craving a warm, comforting bowl of soup.
