## In short

Seomin Makguksu Jecheon Main Branch is a pure buckwheat makguksu (cold buckwheat noodle) restaurant on Sungmun-ro in Jecheon, Chungbuk, a 10-minute walk from Jecheon Bus Terminal. Visiting Jecheon for the Jecheon International Music & Film Festival, the writer and a friend ordered cold water makguksu, yukjeon (pan-fried beef) and buckwheat pancake in a crisp fried batter for lunch. The crunchy buckwheat pancake with the icy, half-frozen broth is the combination worth ordering at Seomin Makguksu.

Seomin Makguksu is a local favorite in downtown Jecheon, known for generous makguksu (buckwheat noodles) and crispy buckwheat pancakes. Since this was my first time attending the Jecheon International Music & Film Festival, I was equal parts nervous and excited. We took the bus down and I slept most of the way, haha.

As they say, even Geumgangsan is best viewed on a full stomach — so we decided to grab a good lunch nearby before properly exploring downtown Jecheon. My friend and I debated what to eat and landed on Seomin Makguksu.

Seomin Makguksu sources buckwheat directly from Jeju Island and handles the milling, husking, and grinding in-house, sticking to a rich, heavy 90% pure buckwheat recipe developed over 20 years of research, according to the restaurant. Inside, clean white floor tiles and a wooden-framed ceiling greet you,

paired with brown wood tables for a cozy yet modern look. Long wooden tables with backed chairs are comfortably arranged, ideal for groups. Each table has a mini kiosk tablet for browsing the menu and ordering, and children's chairs are also on hand — making this a tidy, comfortable spot to eat in downtown Jecheon.

## What the water makguksu, yukjeon and buckwheat pancake look like

Seomin Makguksu's signature dish, the pure buckwheat water makguksu, features neatly coiled buckwheat noodles sitting in a cold broth topped with floating ice shards, piled high with crunchy pickled radish and red-stemmed sprouts for a colorful, appetizing look.

On the side, the yukjeon (pan-fried beef) comes evenly coated in golden egg batter and sprinkled with sesame seeds, served with thick layered slices of meat and a generous helping of tangy, spicy chive salad. The buckwheat pancake here is different from the usual kind — coated in a thin, crispy batter and deep-fried until golden, then cut into bite-sized pieces. Right beneath that crunch is a chewy buckwheat wrapper packed with spicy kimchi filling, a treat for both eyes and ears.

## Crisp outside, soft inside: the fried buckwheat pancake and yukjeon pairing

If you visit Seomin Makguksu, you have to order the crispy buckwheat pancake as a side. First comes the crunch of the fried outer layer, then immediately the chewy buckwheat wrapper and spicy filling flood your mouth with flavor — a distinctive dish that's hard to find anywhere else.

The golden, moist yukjeon is also excellent dipped briefly into the makguksu broth and eaten wrapped with the noodles — the refreshing savory broth and the salty, nutty yukjeon flavor come together perfectly, an unexpectedly great pairing.

## How the pure buckwheat makguksu tastes at Seomin Makguksu

If you're dining with company, it's fun to order one bibim makguksu (mixed) and one water makguksu and compare. The pure buckwheat noodles, made from Jeju buckwheat, are mild yet release a subtle nutty aroma the more you chew, and combined with the ice-filled broth they leave your stomach feeling cool and refreshed.

The heavy texture of the in-house milled buckwheat and the carefully prepared toppings come together so well that you'll find yourself impressed until the very last bite — the essence of what makes this a top makguksu spot in downtown Jecheon.
