I had an appointment near Suwon Station and ended up at Ssosam 208 Suwon Station Branch, a place known for its unique volcano-shaped hot plate.

Ordering meat automatically comes with a rice noodle soup. The warm broth was generously filled with noodles, and the kimchi gave it a slightly spicy, refreshing edge. Sipping it while waiting for the meat to cook felt like a nice way to settle the stomach.

With the side dishes and rice noodle soup filling the table, all that was missing was the meat itself.

The noodles went down smoothly but still had a bit of chew to them. And even though this is a complimentary side dish, you can get one refill if you want more.

## The 500g mixed stone-plate on the volcano hot plate

Soon after, the mixed stone-plate arrived. On the volcano-shaped hot plate — raised in the middle like an actual volcano — were generous portions of pork belly, pork neck and cheollyeopsal, with kimchi, tofu and minari on the side.

In the hollow at the center sat the orange lava fondue cheese, which caught my eye the moment it hit the table.

As the plate heated up, the meat began sizzling and the cheese in the middle slowly started melting.

The rendered fat naturally flowed down toward the bottom of the plate, where the kimchi and tofu cooked in it, sending up an even richer, savory aroma.

The meat was cut into thick, bite-sized pieces. Even as the surface browned, the inside still looked moist rather than dried out.

The pork belly had clearly defined layers of lean meat and fat, and the pork neck and cheollyeopsal were both cut generously thick.

Grilling three cuts on one plate made it fun to compare the different textures as we ate.

A staff member grilled the meat for us, so we didn't have to keep an eye on the plate ourselves.

Watching the cheese bubble away while we waited for the meat to finish just made us more eager to dig in.

With the browned meat, grilled kimchi, tofu, minari and lava fondue cheese all together on the plate, it looked seriously satisfying.

The deep orange of the cheese in particular really did look like flowing lava, giving it that distinctive Ssosam 208 touch.

First, I tried the well-cooked pork belly on its own. The outside was browned and slightly crisp, and biting in released a savory juiciness.

The thickness was just right — not dry, and with a satisfying chewiness. Adding the kimchi that had cooked in the fat brought a tangy note that paired well.

Dipping just in salt let the pork's natural savoriness and chewy texture come through without any seasoning covering it up. Personally, I liked starting with this plain version the most.

The flying fish roe egg custard looked appetizing from the moment it puffed up over the bowl. A spoonful was soft and warm, with the roe popping here and there — a nice bite between rounds of meat.

Dipping the meat lightly in the house special sauce added a salty, savory depth. The sauce wasn't overpowering, so the meat's own flavor still came through.

At first you taste the richness of the cheese, then the bright aroma of the minari follows — it turned out less heavy than expected.

Just the meat with the tangy dressed scallion strips was plenty satisfying on its own. After a few bites of meat, adding stone minari cleaned up the palate and made me reach for my chopsticks again.

I also layered browned kimchi and minari on top of the meat.

The savoriness of the pork belly plus the tang of the grilled kimchi and the fragrance of the minari — this ended up being the combination I went back to most often.

I placed a grilled garlic clove on top of a piece of browned pork belly and dipped it lightly in the salted anchovy sauce. The savory juiciness of the pork belly combined with the sweet, soft grilled garlic, and the salty anchovy sauce brought out even more depth. The garlic also cut through the pork's richness, making it a combination I kept coming back to.

## Cold buckwheat noodles and beef brisket doenjang stew to finish

After eating plenty of meat, I cleansed my palate with cool mul-naengmyeon (cold buckwheat noodles in broth).

The icy broth, with bits of slush floating in it, was tangy and refreshing, and the noodles weren't tough, so they were easy to slurp down. After all that rich meat, one bite instantly felt cleansing.

The beef brisket doenjang (soybean paste) stew arrived bubbling in a stone pot.

Lifting the lid released a hearty doenjang aroma that made me instinctively ask for a bowl of rice.

The stew was packed with plenty of beef brisket, tofu, zucchini and scallion.

The broth wasn't too salty or heavy, and the savoriness from the beef brisket made it a great match for rice.

Mixing warm rice into the stew let the broth soak into every grain, making for a filling finish.

I also topped the leftover meat onto the cold noodles. The cold, tangy noodles alongside the warm, savory meat turned out to be a great combination too.

A country-of-origin sign was clearly displayed on one side of the restaurant, so I could check it myself before the meal.

If you're driving, you can use Hwanggeum Parking Lot right behind the restaurant. Two hours are free, but don't forget to register your license plate at the counter when you pay.
