There are window seats looking out, and the interior seating is split into several zones, so it looked good for anything from families to larger groups. At places where you're serving yourself shabu-shabu or buffet-style food, narrow spacing between tables can get annoying when you're moving around — but here the space is generally wide, so going back and forth to the self-bar was easy.

## From cypress steam straight into shabu-shabu

The dish I was most looking forward to at Pyeonbaek Hoegwan Dongtan Branch was, of course, the cypress steam! Meat and several kinds of vegetables go into a cypress-wood steamer and get steamed right at the table. Unlike grilling meat directly on a pan, steaming it together with vegetables means it doesn't feel heavy or greasy from the start, and honestly, opening the lid on the cypress steamer was a pretty mouthwatering sight.

But that's not the end of it. After enjoying the cypress steam, you move on to shabu-shabu! You start with the light Dongtan cypress steam, then take the same meat and vegetables and cook them in hot broth for Dongtan shabu-shabu — so even though it's one meal, it has that fun feeling of a course where the menu keeps shifting.

Eating just one dish the whole time can get a little tiring by the end no matter how good it is, but since the style of eating changes here, I stayed into it the whole way through.

### The sides were more varied than expected

Another thing I liked about the self-bar: it wasn't just the main ingredients — there was also a good variety of dishes to snack on in between. Good for grabbing while waiting for the cypress steam to finish cooking, and good for reaching for something different when you're craving a change from all the shabu-shabu. I kept adding a little of this and a little of that, and before I knew it, the table was full haha.

### Opening the cypress steamer at last

The cypress steam I'd been waiting for is done :) Opening the lid, the meat and vegetables were all cooked together and looking delicious. Even in photos, it looks pretty generous, right?

I liked the cypress steam best when I ate the meat together with vegetables, dipped in sauce, rather than eating meat on its own. It's a completely different feel from meat grilled in oil, which made it a good opener. Eating through the meal, I realized the biggest strength of Pyeonbaek Hoegwan Dongtan Branch is really just having so many options. With side dishes on top of that, it was convenient not having to force a whole group's tastes onto one single menu. Earlier, the same meat and vegetables were eaten plainly as steam; this time, with hot broth, it felt like a completely different dish. Load the broth up with plenty of vegetables, let it simmer, cook the meat lightly and eat it together — warm and cozy :) You can keep adding ingredients and simmering, so the meal naturally stretched on longer.
