## Ordering cheese cutlet, regular cutlet, and buckwheat soba

We ordered the cheese cutlet and the regular cutlet, and decided to try the buckwheat soba (cold buckwheat noodles), too. For some reason, I always have a habit of trying the soup first at pork cutlet restaurants. I think soup is how a Western-style Korean pork cutlet meal should begin. But at Onjeong Gyeongyang Sikdang, the soup was much more carefully made than I expected.

### Soup that did not taste store-bought

Honestly, when I have soup at pork cutlet restaurants these days, it often has that familiar ready-made taste. I use store-bought soup myself when I want something simple at home, so it is not as if I do not know that flavor. That is why I am genuinely disappointed when a Western-style restaurant's soup tastes like packaged soup.

But the soup here was much cleaner and smoother than I expected. Rather than being aggressively rich, it felt refined and well balanced. I liked how it felt like warming up my stomach with soup before the pork cutlet.

## Two pork cutlets, crisp outside and juicy within

And finally, the pork cutlets. My husband had the regular cutlet and I ordered the cheese cutlet, and both had a crisp coating.
