## Thick pork belly grilled by the staff themselves

Dojeok, a well-known pork belly spot in Inge-dong, gives you thick, thick pork belly cut to just the right bite size by the staff. They grill it lined up neatly, just the way I like it, and the visual alone makes me want to go back just looking at the photos.

At Dojeok, the staff grill the pork belly themselves, so all you have to do is watch it turn golden. As you can see in the photo, the pork belly is so thick you can practically see the juices bursting out. It was already crowded on a weekday evening.

## Right in the middle of Nahyeseok-geori — what's the vibe?

Dojeok sits right in the middle of Nahyeseok-geori, so it was easy to find. The space is very spacious, and it looked great for group dinners too.

True to a restaurant that's appeared on the TV show 'Master in the House,' the layout lets you see the owner personally hand-cutting the knife-cut pork belly near the entrance or off to one side of the restaurant, which really built my trust in the meat.

The wood-textured tables gave off that classic Korean BBQ restaurant vibe — perfect for clinking glasses comfortably with friends or coworkers. Thanks to the soft, not-too-bright yellow lighting, it was a great spot for grilling meat and chatting.

## Side dishes: bean sprout scallion salad and salad

The side dishes at Dojeok aren't about sheer variety — they're thoroughly focused on 'harmony with the meat.' Spicy, tangy, salty flavors dominate, cutting through the richness that knife-cut pork belly can otherwise have.

I filled up a little on the salad before the pork belly arrived. With the mayo dressing already filling me up a bit, I then had the bean sprout scallion salad seasoned with chili powder and soy sauce, and I nearly felt full before the pork belly even showed up. Not really, haha.

This isn't a regular scallion salad — it's tossed together with bean sprouts, so it comes out spicy yet sweet and tangy. When the sharp scallion aroma mixes with the meaty aroma of the pork, the savoriness explodes.

## Doenjang jjigae comes as a default side dish

The biggest standout feature at Dojeok is that doenjang jjigae (soybean paste stew) comes as a default side dish. Even the color is different — not a light miso shade, but a deep brown, like traditional homemade doenjang.

The broth isn't light — it's rich and heavy, with a deep, savory flavor and soybean bits you can slightly bite into. The soft tofu soaking up the broth paired really well with the nutty doenjang flavor. It's seasoned fairly strongly, so it was perfect for mixing into a bowl of rice.

## Grilling service starts with a different kind of grill pan

I think part of why it tasted even better was the charm of this grill pan. Different from a typical pork belly restaurant's grill, the pork belly sizzled and cooked to the sound of what felt like raindrops falling.

It seems like grilling service is standard here. Once the surface turns nicely golden, the owner takes the meat away, slices it into even pieces in the kitchen, and brings it back out. During this process, they season it again with salt and pepper, and this seasoning seemed to cut the gamey smell of the meat and really bring out the savoriness.

## The signature knife-cut pork belly — texture made by the scoring

This is the restaurant's signature knife-cut pork belly (kalsamgyeopsal). As the name suggests, its defining feature is the precise scoring cut into the meat. Countless cuts run across the surface of the thick whole pork belly, so when it grills on the pan, heat penetrates through the gaps, letting the fat render out while keeping the juices sealed in.

Once fully cooked, it opens up like a blooming flower, which is visually appetizing on its own, and thanks to the scoring, the texture is much softer and chewier than regular pork belly.

## Soybean powder vs. grilled kimchi — which pairing wins?
