## Why we chose Bongpyeong Memil Migayeon as our first meal in Gangwon

Bongpyeong Memil Migayeon is the restaurant that comes up first when you search for makguksu (buckwheat noodle) spots in Pyeongchang, Gangwon-do. We couldn't make it out for summer vacation, so as a bit of a consolation we took a family trip to Gangwon-do instead. Traveling really is about the food, right! For our first meal in Pyeongchang, we decided on makguksu, my dad's favorite, and headed to Bongpyeong Memil Migayeon.

Bongpyeong Memil Migayeon has its own parking lot. It was extremely crowded, but since it's a makguksu place turnover is quick, so cars kept leaving and parking didn't seem to be a problem.

We got there around 1pm on a Saturday, and even before we'd parked we could tell — this is really a famous spot — because people were lined up outside. Of course!! It's Bongpyeong Memil Migayeon after all. We went in first to get a waitlist number, and they said it would be about a 30-minute wait. While we waited, we looked around inside and — whoa, a master craftsman certification?

Chef Edward Lee, from Culinary Class Wars, apparently visited recently too — the walls were covered in photos. I heard he praised the noodles enormously. So exciting!!! That said, weekends get a lot of waiting, so an opening-time run is probably a good idea. We went around noon on Saturday and there were about 15 parties ahead of us, with about a 30-minute wait.

Even at Saturday lunchtime, the interior was packed with people. Bongpyeong Memil Migayeon has quite a large interior and even rooms available, so it seemed like a great option for family gatherings too. The tables were spaced wide apart as well, so even with a full house, moving around wasn't a problem at all.

None of us can handle spicy food, so we ordered three migamyeon (water-style noodles), one bibim noodles, and one buckwheat pancake. And that thing in front of the ordering tablet is kelp vinegar — a real game-changer!!! I meant to take a photo after tasting it because my eyes went wide, but I was too busy eating. Wish I'd bought a bottle to take home, kind of regret it.

### Buckwheat pancake as fluffy as castella

The buckwheat pancake at Bongpyeong Memil Migayeon wasn't like the buckwheat pancakes we usually eat. Fluffy, almost like eating castella cake? Genuinely soft and crumbly, and when the spicy filling inside burst through, it was so good. I'm super weak to spicy food so the filling was a bit much for me, but when something's this delicious you just keep eating!! Normally buckwheat pancake is pan-fried in oil, but this one is completely light and clean!! Definitely order it, highly recommend!!

### 100% buckwheat migamyeon, with the broth poured separately

Table all set!! Let's dig in. 100% buckwheat cold noodles?! First, the water-style makguksu came with the broth served separately. They explained that you first eat it plain, then dip it like soba. I figured 100% buckwheat noodles would fall apart in clumps, but surprisingly they had real chewiness. This is what 100% buckwheat noodles taste like — I realized every makguksu I'd eaten before was nothing compared to this.

The water-style makguksu is basically seasoned with soy sauce and perilla oil. You can eat it clean first, then dip it in the broth like soba, or pour the broth in entirely and eat it naengmyeon-style. At this point, one spoon of kelp vinegar is essential! It opened my eyes so much I secretly added two spoons — not telling anyone that.

I also had a bite of the bibim noodles my husband ordered, and wow, so savory!!! The sauce wasn't too spicy, so it worked fine even for someone who can't handle spice. Still, I can't give up the water-style makguksu!! I want to eat it again right now. Whenever you're craving makguksu, head to Bongpyeong Memil Migayeon in Pyeongchang~!!

## Tips for visiting Bongpyeong Memil Migayeon

- Weekend lunches get busy — an opening-time run is recommended; on a Saturday at noon there were 15 parties ahead and about a 30-minute wait
