I heard the buzz and went straight over. How did I know it was already a good restaurant when it had barely opened? They originally ran it in Changwon and it was a huge hit there!!! Snapping photos quickly before it got busy. I was starving and wanted to order literally everything, but my fiancé suddenly craved a steaming hot pot, so we picked two servings. FYI, hot pot is available from two servings. Next time, stone-pot seasoned stir-fry... grilled tripe... You could really taste the owner’s touch in these dishes! I was told they make them all themselves. 👍🏻 The cool dongchimi (water kimchi) broth was wonderful. Taking a spoonful here and there while eating the rich, spicy tripe hot pot worked far better together than I expected. Stir-fried seaweed stems had a wonderfully chewy texture and mild seasoning, so they were easy to enjoy. Every side dish paired beautifully with the spicy hot pot. Is that seasoning sprinkled on top their secret sauce~? Since it had been a while since I’d eaten hot pot, the owner said it tastes even better when reduced properly and helped us cook it along the way. Ahh, it was bubbling away beautifully. We thought it was ready to eat, but the owner said, “Not yet,” haha—more reducing needed!!! We took the words of the yang-gopchang expert to heart and patiently waited. At this point, the owner told us to taste a spoonful of broth, and wow............. I genuinely had no words. Not just among recent meals, but among all the tripe hot pots I’ve had in my life, it ranked at the top. The broth was insane.. But the owner still said it needed reducing, haha. We normally like them firm, but the owner said they taste better after soaking up the deep broth, so that day we let them cook a bit longer. In conclusion, the ramen was seriously delicious too. The broth was spicy and rich, not the kind that is just aggressively hot; you could also taste the distinctive nutty flavor of the intestines. They do not just stir-fry it. There was a separate recipe for this too. They stir-fry it with the seaweed-stem side dish, and that was the real finishing kick......... There may be people who do not know Miracle Yang Gopchang in Gimhae, but I doubt anyone visits only once... You really have to try the hot pot here, and the noodles and fried rice are non-negotiable. From now on, Miracle Yang Gopchang may be my only stop for yang-gopchang in Gimhae. There is a reason famous places are famous.
