Hangover soup (haejangguk) is always what comes to mind when I want a solid, filling meal, so this time I ate at Jeju Eunhuine, well known as an Ingye-dong restaurant. If you want to properly try Ingye-dong gukbap (soup and rice), this place absolutely has to be on your list. The blood cubes especially are chewy with no off smell, clean enough that even women who are picky about it tend to like them. And the tripe soup alone was enough to make me a regular. A bone broth base loaded with springy tripe and small intestine~! It's said to be clean Jeju-raised fresh pork belly boiled in a broth made with 12 ingredients, and the meat was truly tender and easy to eat. The depth of the broth is on another level. This is a hangover soup that actually cures your hangover! A rich bone broth simmered for 24 hours, combined with napa cabbage from Haenam, fresh bean sprouts, and tender meat with no off smell — a perfect combination. The morning after drinking? Obviously the best cure. Even on a day when you're just craving Ingye-dong gukbap, that broth flavor keeps coming to mind haha. And the main dish, the hangover soup! I ordered mine without the blood cubes haha. Inside were generous amounts of beef brisket and shank, bean sprouts, and napa cabbage, so it was fun fishing out and eating all the ingredients too. Above all, the broth was spicy and rich, so mixing rice into it made for a really filling meal. With the crunchy texture of the bean sprouts plus the napa cabbage, it felt much more substantial than just drinking the broth alone.
