On hot days like these, sometimes what you really want is food that snaps your appetite back to life. This time I was craving good Vietnamese food near Ajou University, went looking for a pho spot, and ended up at Madam Hao!

I started with the meat, and the very first bite had a gentle charcoal aroma. Next up was the dish I was most looking forward to that day — the beef brisket pho. Generous slices of brisket sat over a clear broth, topped with a heap of scallions, so it looked quite hearty from the start.

I tried the broth first, and the spice aroma was milder than I expected. Rather than an in-your-face spiced style, what came through first was a clean yet deep broth flavor.

So even people who find overly spiced pho a bit much would probably find this one easy to enjoy! That said, the broth wasn't bland either — the first sip was clean and light, but the deeper, meaty flavor kept coming through the more I ate, so I kept going back for more with my spoon haha.

There was plenty of brisket, too, and it was cooked soft and tender, easy to eat. Eating the noodles and brisket together, then taking a sip of broth, gave an overall clean and comforting flavor!

Personally, the plain broth was already good, but I liked it even more after adding chili and lime. Bun cha and pho alone felt like it might not be quite enough, so I ordered cha gio (fried spring rolls) as well! The outside was fried thin and crispy. The batter wasn't too thick, and I could really taste the texture of the glass noodles, minced meat, and vegetables inside.

Even though it's fried, it wasn't as greasy as I expected, so it wasn't heavy to eat alongside the pho! Dipped in the sauce, it got a nice salty, savory boost, and it was easy to pop one in between bites of the light pho.

The food was the most memorable part, but the atmosphere was pretty good too. Bamboo lighting, wood interior, and plants scattered around gave it a real Vietnamese street food feel. The photos of Hanoi streets on the walls matched the vibe well.

It was fun to look around while waiting for the food, and overall it wasn't too noisy, so it was a comfortable place to eat.

If I had to pick my favorite dish from this visit, I personally enjoyed the bun cha the most. The combination of gently charcoal-scented meat and the sweet-tangy sauce was great, and eating it with lettuce and noodles kept it from getting boring.

Second place goes to the beef brisket pho. The broth wasn't overpowering and was clean, so I could finish the whole bowl without feeling weighed down. If you usually prefer a clean, deep style of pho over strong spice, this one should suit your taste well!
