Seochon is a place where your steps naturally slow down. Right in the middle of Seoul, surrounded by tall buildings, it still holds onto old alleys, hanok houses, and views of Gyeongbokgung Palace, which gives the whole neighborhood really good energy. In Seochon, rather than just grabbing a meal, it feels more fitting to sip coffee slowly, eat some good bread, and take a little break. True to its slogan as a space for rest, it was a quiet, comfortable spot that matched Seochon's mood perfectly. Above all, if you like salt bread, this is a place worth checking out at least once.

## Next to the Gyeongbokgung walking path, the view matters as much as the bread

The view matters as much as the bread! What I loved about Respire wasn't just the food. This café sits below Cheongwadae with the Gyeongbokgung Palace walking path as its backdrop, so you get to enjoy the space alongside Seoul's historic sites. Since it's right in front of a parking lot, there's apparently been some parking trouble, so there's a separate notice about it! Make sure to check it before you park!

Walk a little and you'll run into Gyeongbokgung Palace; head into the alleys and you'll find old buildings and small shops one after another. Walking slowly through Seochon like that, then stepping into Respire for a warm coffee and salt bread, feels like slipping into a different pace of time away from busy Seoul.

## The salt bread display at lunch peak time

I went during lunch peak time, so the bread shelves had gaps here and there, but as luck would have it, it was just about time for the salt bread to come out. What stands out about Respire's bread is the cold-proofing process — all the dough is cold-proofed for 12 hours, baked fresh every morning, and sold only on the day it's made, or so they say. That's how they focus on that chewy texture and the bread's full flavor.

It looked like a small portion but was actually just the right amount for a meal. I was about to order a warm latte, but with the weather warming up I switched to iced at the last second!

Looking at the cross-section, there was a generous amount of egg packed in. The café's name, Respire, is inspired by the French word 'respirer' (to breathe), and true to that name, it really did feel like the right place to pause and catch my breath for a while.

## 1st and 2nd floor seating — there was room even at peak time

With seating on both the first and second floors, I was able to grab a spot even during peak time. It's a good place for a date, or for brunch and conversation with a friend. They say it can also work for group gatherings or for setting aside some special time. Above all, the atmosphere of the café matched the Seochon setting so well.

A place where you go in just meaning to eat a nice piece of salt bread, but end up wanting to linger a bit longer once you're looking out the window with a coffee in hand.

If you're looking for a great brunch spot in Seochon, I'd recommend Respire's salt bread together with the omelette sandwich. From crispy, savory salt bread to a naturally leavened ciabatta brunch, pick whatever suits your taste, and afterward, a slow walk along the Gyeongbokgung Palace path makes for a nice finish.
