With the meat-only Myeongin Sundaeguk and the handmade assorted sundae full plate, the table looked completely packed. This would work well as a full meal, and I think it'd also make a great late-night drinking snack.

## Myeongin Sundaeguk (meat only): no sausage, just meat and offal

This is Sinju Okmi's signature sundaeguk with the sundae (blood sausage) left out entirely, filled instead with nothing but meat and offal.

From the bottom of the earthenware bowl to the top, every spoonful pulled up more ingredients — it was that packed. True to meat boiled in four separate batches a day, it was tender enough to melt, with no dryness at all.

The handmade sundae, neatly sliced and filling the plate, was on a different level from the usual glass-noodle sundae — thick-cut, densely packed with vegetables, meat, and glass noodles, bursting with rich juices and a nutty flavor.

Liver and lung, in particular, tend to dry out or develop a strong iron-like smell as time passes. But the offal in Sinju Okmi's assorted sundae was moist, as if it had just been boiled.
