I visited Jangwongap Kalguksu Yongin Giheung Branch with my family. Starting with brisket and minari wraps, then having kalguksu and finishing with fried rice, made the meal feel like a course in its own right. What stayed with me most was stretching the fresh noodles myself and dipping the cooked noodles in sesame oil.

## Where is it, and what were parking and the wait like?

The restaurant is on the first floor of a large commercial building at 90 Gomae-ro, Giheung-gu, Yongin-si, Gyeonggi-do. It was easy to find, and parking was spacious during my visit. There was pine landscaping at the entrance.

There was a wait when I visited. I could register through Catchtable, and there was a corner with free ppongtwigi (puffed rice snacks) and fried snacks to eat while waiting.

## What are the “cheese noodles” like?

Banners throughout the restaurant described 60 years of noodle-making technique passed down from the grandmother's generation, using water, nuruk salt, and flour. They called their house-made noodles, kneaded a thousand times, “cheese noodles.” The name refers to their elastic stretch, like cheese pulling into long strands.

The restaurant explained that the noodles' texture changes with cooking time: chewy at 6 minutes, more springy at 7, bouncy at 8, fluffy after absorbing broth at 9, and soft at 10 minutes.

## How did we eat the brisket and minari wraps with kalguksu?

Before adding the noodles, we briefly blanched the wagyu chadolbagi (thin-sliced beef brisket). I piled plenty of minari (water celery) onto the meat for wraps and dipped them in sesame-oil sauce. The meat's rich aroma was joined by the herbal minari and nutty sesame oil.

Before putting the kalguksu into the boiling broth, I pulled a strand of fresh noodle from both ends. It stretched long without breaking easily, and I could feel its elasticity. I ate the cooked noodles plain first, then lightly dipped them in sesame oil. The added nuttiness was memorable.

## What were the kimchi and seafood pajeon like with the kalguksu?

The restaurant said its Uiseong garlic kimchi is made in-house three times a day with domestically grown garlic from Uiseong. It added more savory depth when placed on the noodles.

We also had the whole-shrimp seafood pajeon (scallion pancake). Its thin batter contained whole shrimp, squid, and octopus. It was crisp outside and moist inside.

## What was the kkakdugi fried rice like at the end?

For the final dish, we had perilla-oil kkakdugi fried rice. It contained well-fermented kkakdugi (cubed radish kimchi) and powdered seaweed, with the nutty flavor of perilla oil. We finished the meal by scraping it right down to the bottom of the pot.

## What benefits and retail products were available during my visit?

During my visit, notices described benefits for children, certain occupational groups, and customers taking food to go after dining in.

- They said pre-school children under age 7 receive a free baby meal.
- They said military personnel, firefighters, and police officers receive five shrimp dumplings free once per table.
- Customers who ordered for two or more people, dined in, and then ordered takeout received one bag of ppongtwigi free.

They also sold sesame oil and perilla oil that they said were pressed directly at a mill. During my visit, the price was ₩14,000 per bottle and ₩35,000 for a gift set.
