Looking for somewhere to eat meat in Hongdae on a weekday afternoon, I ended up at Chopilsal Pork Grill Hongdae Branch.

A lot of Hongdae BBQ places don't open until evening, so I liked that this one opens at noon — you can get pork belly and pork skin starting from lunchtime.

Chopilsal Pork Grill became known nationwide back in 2015 for introducing beoljip gyeopdegi (honeycomb-style grilled pork skin), so I was curious about their signature pilsal gyeopdegi. Personally the pork belly was tasty too, but the pork skin I ate last really stuck with me!

## How close is it to Hongdae Station?

It's about 273m from Exit 1 of Hongdae Station, so pretty close. Coming out of Exit 1, you go around the L7 building into the alley behind it — just a few minutes on foot, which made it easy to reach by public transit.

I visited on a weekday afternoon, and one nice thing was having a wide range of time slots to choose from if you're looking to eat meat from lunchtime near Hongdae Station. The restaurant runs across two floors, so it's bigger than I expected.

Unfortunately there's no parking support, so if you're driving you'll need to use a nearby paid lot. There's a paid lot right next door at the Cheongha Building.

### Atmosphere and seating

Chopilsal Pork Grill Hongdae Branch uses both the 1st and 2nd floors, so the interior is bigger than you'd guess from outside. Overall it has that lively BBQ-restaurant energy, with comfortable table seating, and even on a weekday afternoon it felt like a fine place to have meat with a drink.

The 2nd floor in particular has group seating good for several people together, which looked like a solid option for Hongdae work dinners or gatherings. If you're planning to visit, I'd recommend checking availability in advance through Naver reservations or by calling the restaurant.

The weather was nice, so we sat by the window overlooking the street!

## The menu and the basic table setting

The signature meat items are salted pork belly, pilsal gyeopdegi, dwitgogi (pork neck), and pork ribs, among others. We decided to focus on the signature items and ordered like this:

- Salted pork belly ₩12,000 × 3 servings
- Pilsal gyeopdegi × 2 servings
- Radish rice bowl ₩2,000
- Pork kimchi stew ₩9,000

When I ordered a bowl of rice, the staff suggested that for an extra ₩1,000 I could get it as radish rice bowl (total ₩2,000) instead, so I went with that too.

Order the meat and a whole spread of side dishes comes out — scallion salad, baek-kimchi (white kimchi), myeongi-namul (wild garlic leaves) and pickles, radish wraps and perilla leaves, garlic, chili peppers.

The side dishes came out more varied than I expected. Alongside the scallion salad there were three kinds of pickles, myeongi-namul, gungchae (aster greens), chili peppers, and shredded radish, with perilla leaves and radish wraps layered together ready to wrap with.

There was also well-fermented mukeunji (aged kimchi), which paired nicely with the fatty pork belly. You could eat it fresh with the scallion salad or shredded radish, wrap it in perilla leaves and radish, or add mukeunji — lots of ways to enjoy one cut of meat.

They set up the grill first for the salted pork belly. On one side they added myeoljeot (fermented anchovy sauce) and threw on some garlic too — plump whole cloves rather than chopped, so they slowly cooked through while the meat grilled.

Pilsal gyeopdegi and salted pork belly arrive! After a short wait, the two servings of pilsal gyeopdegi and three servings of salted pork belly came out together. The pork belly had a good thickness with clear layers of meat and fat, looking appetizing even before it hit the grill, and the pilsal gyeopdegi came out generously portioned too.

## How the three servings of salted pork belly were grilled

They laid all the salted pork belly in the center of the grill at once. Since it had some thickness, it worked better to flip it back and forth and brown it slowly rather than just searing the surface on high heat.

Once both sides were well browned, they cut it into bite-sized pieces. Cooking it slowly so the juices inside didn't dry out, rather than rushing the surface, left it browned outside and still moist inside.

Once the surface got a nice appetizing color, they cut it into pieces and browned the cut edges a bit more too. The whole garlic cloves beside it browned in the rendered fat, and the myeoljeot started bubbling — it really felt like proper BBQ time.

## From salt to wraps to myeoljeot — eating it every which way

The first bite of well-grilled pork belly, I just dipped in salt. The second it hit my mouth, the browned surface was savory and the inside still had juicy fat left in it — the meat was tender, the fat layer savory and chewy, with all the texture pork belly is known for.

You didn't need much salt at all — just a light touch brought out the clean meaty flavor and the savoriness of the fat even more clearly.

After a few more bites, the ratio of meat to fat suited my taste well. It wasn't too thin, so each bite had juicy meat and a soft, savory fat layer, plus the chewy texture of the skin added even more variety within a single piece.

Since it was just salted without heavy seasoning, I could keep eating it without getting tired of it, and the meat itself was tasty enough that I ate the first several pieces plain, without any sides.

I tried it with everything from myeoljeot to mukeunji to wraps. Dipped in the bubbling myeoljeot, it got a salty savory kick, while eating it with mukeunji, scallion salad, or shredded radish added a tangy note that cut through the pork belly's fattiness.

I also layered perilla leaves and radish wraps around the pork belly for a wrap, and adding myeongi-namul or gungchae pickles brought in a crunchy texture for yet another flavor. Eating the well-browned whole garlic in between doubled up the savoriness.

With so many sides to mix and match, I could keep changing up the combinations even with the same salted pork belly, and it was so good we ended up ordering a bottle of cheongha for a light daytime drink alongside it.

Since meat alone felt like it was missing something, the radish rice bowl we'd also ordered arrived. It comes piled generously with rice and shredded radish in a wide metal bowl — the rustic bowl alone gave off proper BBQ-restaurant vibes.

The crunchy shredded radish was tangy and mildly spicy — good with plain rice on its own, and it cleaned up the palate nicely when eaten with the fatty pork belly on top. The portion was more generous than expected, and the crunchy, tangy radish on the rice worked well between bites of meat.

### Q. Is the radish rice bowl worth ordering instead of plain rice?

I'd recommend it. For an extra ₩1,000 you get a generous portion and get to eat the shredded radish alongside the meat — it makes eating more fun! Strongly recommend.

The pork kimchi stew (₩9,000) we also ordered came out bubbling hot in a stone pot. The tangy, spicy flavor from well-fermented kimchi was deeply infused in the broth, making it great to spoon up between bites of pork belly — the spicy broth kept cutting through the savory fattiness of the meat, so I kept going back for more.

It paired especially well with the radish rice bowl as a filling meal, making it a good combo for anyone wanting to eat samgyeopsal or ogyeopsal in Hongdae while also getting a proper rice meal in.

The pork belly was delicious on its own, but there was also fun in switching up the sides. Piling browned pork belly on top of the radish rice bowl worked great, with the crunchy, tangy radish balancing the savory richness of the meat.

I also wrapped it in myeongi-namul, or added perilla leaves, radish wraps, mukeunji, and pickles, changing the combination piece by piece. With so many side dish varieties, three servings of pork belly never got repetitive and stayed delicious to the last bite.

## Last up: pilsal gyeopdegi, and now I get why it's famous

After finishing the pork belly, they changed the grill plate and grilled the two servings of pilsal gyeopdegi. They put the pork skin on the grill, then pressed a wire rack on top of it while grilling.

When I asked, staff said during busy hours the kitchen grills it and brings it out ready, but when I visited I got to watch it being grilled right at the table. Just be a little careful nearby, since oil can splatter quite a bit while it cooks.

Once both sides were grilled through and the surface turned crispy, they cut it into bite-sized pieces. The photos came out a bit darker than reality — in person it was lighter and more golden-brown, well cooked.

One bite in and I immediately understood why this place is so often mentioned as a top spot for pork skin in Hongdae. The moment it hit my mouth, a sweet, salty sauce flavor hit first, followed by a deep savory richness.

The surface was properly grilled and crispy, while the inside kept a springy, crunchy-chewy texture. It wasn't so thin that it was only crispy, nor so thick that it got tough — the balance of thickness and texture was really excellent. Personally, it's up there among the best pork skin I've ever eaten.

The sauce is delicious eaten plain, but dipping it in soybean powder added a nutty flavor for a whole different feel. With the sweet, richly savory pork skin plus the nuttiness of the soybean powder, it was a familiar flavor I kept reaching for.

When I wanted something a bit more intense, I added the spicy sauce too. The heat after the sauce's sweetness cut through the richness nicely, and this combo worked well too.

Above all, two servings was a pretty generous portion — not a side dish you finish in a couple of bites but a proper full plate to enjoy. The crispy outside, chewy inside, and sweet sauce kept me reaching for more even after I was fairly full — genuinely addictive. It paired great with cheongha too, and honestly, between the two, the pilsal gyeopdegi stuck with me even more than the pork belly as a drinking snack.
