I was visiting Jeonju and suddenly craved raw short ribs so badly. I went with my grandma and husband to Ubookgeum Saenggalbi Seosin Branch, and honestly, I couldn't believe this quality could come from non-hanwoo beef — it was so tender and juicy that I had to write this up.

Spoiler: seriously, this was the tastiest meat I've had in a while.

This area (Seosin-dong) is old and parking can be tough, but Ubookgeum Saenggalbi is right next to K Parking Lot. Just make sure to grab a parking ticket and get it stamped at the restaurant.

The receipt review reward was appealing — you get to choose from five options: soju, beer, water naengmyeon, bibim naengmyeon, or soybean sprout hot pot. We're light eaters so we couldn't order more ribs, and I regret that now.

## Side dishes and the seasoned soybean sprouts everyone asks about

The basic banchan at Ubookgeum Saenggalbi Seosin Branch included ssam vegetables, myeong-i namul (wild chive leaves), baek-kimchi (white kimchi), garlic, and mushroom wasabi — though the mushroom wasabi portion felt a bit skimpy. Since a lot of people leave it uneaten, I guess they cut back a little. If you want more, just ask.

The real kicker here is their signature seasoned soybean sprout salad — spicy and sweet with a refreshing flavor I'd never tasted before. I was surprised the first bite. When you're eating meat, these little standout side dishes always play an important role.

And here's the shocker. Just because it's free, does that mean the hot pot bowl is small? Not at all. The restaurant's motto is "plenty of food, delicious food," and they were sticking to it perfectly.

These days, ordering doenjang jjigae and steamed egg separately would cost at least 8,000–10,000 won combined, so getting them free with the meat order was already satisfying.

The moment it came out, I naturally thought, oh this is definitely 1++ hanwoo — but then, the price is way too reasonable for that? The juiciness was insane enough to pass for 1++ hanwoo.

The owner grilled it for us himself, and you could tell at a glance the saeng-galbi quality was excellent. Is cutting it like that a trick for locking in the juices, or is it just because the meat itself is good quality? The moment it hit my mouth, juices poured out — it was properly well-marbled.

No gamey smell at all. The charcoal aroma had seeped deep into the meat fibers, giving it a rich, natural beef flavor. (Seriously the tastiest meat I've had recently.)

## Grandma is a picky eater, and she fell for the bibim naengmyeon

The moment my grandma ordered bibim naengmyeon and took a bite, she seemed to love it so much she asked the owner if she could come back just for lunch with the naengmyeon alone, hahahaha. We tried some too, and the sauce was tangy and the noodles were cooked just right — I got why grandma fell for it.

### Grandma's tip for eating saeng-galbi

Mix in the free soybean sprout salad with the naengmyeon! I guess my food-lover genes really did come from my grandma. I highly recommend this method too — it adds texture and makes it even tastier.

When he wasn't too busy, the owner even trimmed the meat off the bone for us himself! That's how we could eat the saeng-galbi so comfortably. My husband said the meat on the bone is the best part and ate it all up. My husband is the best.

I prefer rice over noodles, so I mixed mine into the doenjang jjigae. Funny, I used to not like radish in doenjang jjigae, but lately I love it so much. Maybe the broth got more refreshing, or maybe I just got older.

But the way I ate best was still grandma's recommended method — piling the meat onto the soybean sprout bibim naengmyeon and finishing it off in no time.
