Boulangerie Tan is a hot bakery spot in Unjeong Chorongkkot Village, Paju, and not long ago they opened a branch in Hyundai Department Store, so I stop by sometimes while shopping. I visited again this time while browsing around the department store. It's located on the basement 1 food floor of Hyundai Department Store, and the first 30 minutes of parking are free, which made it convenient to drop by. If parking inside the department store is hard, you could probably just pull over on the street nearby for a bit and run in and out.

## Store size and coffee menu

The Hyundai Department Store branch of Boulangerie Tan is small, but it carries all the popular breads from the original location. You can also order coffee — they use Fritz Coffee beans, and most of the origin is domestic, which felt trustworthy. The coffee menu was fairly simple.

## What's in the showcase — cream salt bread and cornet pies

The showcase at the Hyundai Department Store branch of Boulangerie Tan had a good mix of desserts, sandwiches, and meal breads, and there were a lot of cream salt breads made using their salt bread. They also sell something called cornet pie — a dessert made of a firm pastry shell filled with cream. I'd heard this pie was popular, so I mentally set it aside to buy as a gift while I browsed the rest of the menu.

Another showcase at the Hyundai Department Store branch of Boulangerie Tan had sandwiches made with salt bread, plus baguettes and ciabattas — fewer varieties than the original store, but full of only the popular items. There were more snack-type breads than meal breads. All the breads here are made using their own cultivated natural yeast starter and slow-fermented at low temperatures for over 14 hours. They only use organic flour and French flour, with no artificial additives like measuring agents, emulsifiers, preservatives, or dyes — made the traditional natural fermentation way, which they say gives it deep flavor. Healthy ingredients, an honest process, made slowly — how could it not taste good?

## Tasting the pumpkin cream cheese campagne and cornet pie

I tried the pumpkin cream cheese campagne (a rustic country bread) first. The campagne crust was thin, and it was packed full of pumpkin and cream cheese inside — the filling was really generous. I usually prefer breads with less filling since I like a plain taste, but my friend loved it, saying it felt like eating a dessert bread, haha.

Next I tried the cornet pies. The cornet pie has a firm, crisp pastry shell filled with various creams, making it a very sweet dessert. The cream is packed in so it's fairly heavy, and it's quite sweet, so it's better enjoyed with coffee or tea rather than on its own. Since it's filled with cream, it's best kept refrigerated. I enjoyed some delicious desserts at Boulangerie Tan. I'll be back again next time~!
