Even in the photo you can tell how milky the broth is, right? I've always liked this milky style of pork gukbap, and pork gukbap from Gyeongsang-do especially has that distinctive savory depth you get from a broth this rich and pale. The moment I took the first spoonful, I thought, 'oh, this broth is good!' It was rich and savory in all the right ways, without being greasy or heavy. Mixing in some rice and topping it with a bit of kimchi made for a truly filling meal haha. The lean meat in the pork gukbap was tender rather than chewy, which made it even better. The meat was soft enough that it got more savory the more you chewed, almost melting in your mouth! As you can see, the sundae used here is the chapsundae (glutinous rice sausage) style. It has a nice chewy, springy texture that goes even better when eaten with the broth. A bite of sundae, a spoonful of broth — a perfect match! When it first arrived, I was surprised by how much there was. It came out so generously that I thought, 'wait, this is just the sample?' lol The portion was satisfying, but more than that, the meat was really tender. The suyuk was boiled just right, soft enough to eat on its own, and even better dipped in the sauce that came with it! Dip a piece of meat in the sauce and it practically melts away in your mouth haha. Piling a piece of suyuk with the geotjeori gave you that crunchy-and-tender combo at once — so good. Eating the pork gukbap alone would have felt like a solid, filling meal, but adding the sample suyuk made it feel like a proper full spread. I left really, really full haha. ## A broth that stands up to Busan pork gukbap From the first spoonful, the broth at Yongho Dwaeji Gukbap stood out for its savory depth. I've eaten pork gukbap in Busan many times, and honestly this broth held its own against Busan's! The deep, savory flavor of the milky broth, combined with tender meat and crunchy kimchi, made for a great combination. Add the sample suyuk on top and you've got a really generous, filling meal :) If you're looking for a lunch spot in Yongho-dong, Changwon, hunting for a great pork gukbap restaurant, or looking for somewhere comfortable to eat with family, Yongho Dwaeji Gukbap is well worth a visit!
