With “noodle workshop” right in the name, it already felt like a place serious about noodles—and the menu really did have so much, from jjolmyeon (chewy spicy mixed noodles) and udon to kongguksu and pork cutlets haha. True to its name, Chilseong Jemyeonso has an amazing variety of noodles. Even the jjolmyeon selection includes bibim jjolmyeon, fresh-wasabi bibim jjolmyeon, and charcoal-grilled beef brisket jjolmyeon, plus several udon and buckwheat noodle dishes, so it was easy to choose according to your taste haha. In the end, it was a really good combination haha. ## Mild and nutty handmade kongguksu The handmade kongguksu was what caught my eye first. Taking a sip of the broth first, its main character was the mild, nutty flavor unique to soybeans rather than anything strongly seasoned haha. It was neither so thin that it tasted bland nor so thick that it felt heavy, so I kept reaching for it. Having kimchi alongside it worked nicely too: cool kongguksu and spicy kimchi alternated perfectly haha. Unlike a typical thin, crispy potato pancake, this one had both the fluffy quality of potato and a pleasantly sticky chew inside haha. After the soft, mild kongguksu, a bite of the pancake brought a completely different texture, which I loved. Their edges were crisp while the inside was a little chewier, so the contrast in texture was very clear when I took a bite haha. This time I tried the seasonally fitting handmade kongguksu, and ordering the potato pancake and fried dumplings alongside it meant I could enjoy mild, chewy, and crispy textures all at once haha. The restaurant was clean and had plenty of menu choices, making it a nice place to stop by for a family meal or when you are wondering what to have for lunch in Seongbok-dong.
