As I was eating the yukhoe on its own, I glanced at the sushi and fresh wasabi that came with it and immediately thought — > Wait... what if I put freshly grilled galbi on top of this? ### How to eat the fresh galbi at Gogi 9dan Grill the fresh galbi over the charcoal until it's just right, put a bit of fresh wasabi on top of the sushi, then add a piece of the freshly grilled galbi on top. Eat it all in one bite. Ah... this combination was genuinely great. It turns into a completely different dish compared to eating the galbi alone. With rice, wasabi, and just-grilled beef all in one bite, it feels like making your own beef sushi on the spot. Once we discovered this combo, we kept putting meat on the sushi for as long as it lasted, lol. If it's your first time at Gogi 9dan, don't think of the 9-step set as just "a set with a few side dishes" — try combining it like this. ### The surprise rice-thief: fresh pork kimchi jjigae It's always a pleasant surprise to find a beef restaurant with good kimchi jjigae. This one was very much to my taste — plenty of meat inside, and rather than the clean, tidy kimchi jjigae flavor common these days, it had that rich, familiar taste like the ones from old-school rice restaurants. One spoonful and you're naturally craving rice. I was about to name it my top rice-thief of the day, but I paused — there was a strong contender. The seasoned crab that came as a basic side dish, lol. ## Do the side dishes go well with the beef? At a beef restaurant, you're already fairly satisfied if the meat alone is good, but when even the basic side dishes keep drawing you in, the whole meal feels that much richer. Salad, pickled onion, seaweed side dish — plenty of things to snack on between bites of meat, and every single one paired well with the beef. Among them, the seasoned crab really stuck with me — the second of the day's two great rice-thieves, alongside the kimchi jjigae. And the japchae (glass noodle stir-fry) deserves a mention too. So we didn't even need to add extra rice dishes — the 9-step set alone kept giving us new ways to eat. - Eating the yukhoe, - then making beef sushi with the fresh galbi, - then rice with the kimchi jjigae, - then jjolmyeon topped with beef... This is exactly why I'd recommend the fresh galbi + 9-step set combo. ## Why we skipped the dessert café afterward I thought we'd just leave stuffed after the meal, but they had the ending pretty well covered too. Why is a cold iced coffee after a beef meal so good, lol. Especially since they had Starbucks beans and ice cups set up separately, so you could make your own iced coffee right there — that was a nice touch. It wasn't just "here's a cup of coffee prepared for you" — having ice cups ready too showed a real attention to detail. And it wasn't just coffee either.
