## A shabu-kalguksu restaurant I found while searching for good food in Yongin

I asked my kid what they wanted to eat, and the answer was shabu-shabu. I was in the mood for hot broth with vegetables and meat too, so we went out as a family for shabu-kalguksu. We ordered three servings of spicy shabu-kalguksu and a crispy seafood pancake. Bottom line first:

> We went because of the kid, but Mom and Dad ended up thoroughly satisfied too.

The house-made kalguksu (knife-cut noodles) noodles were way better than I expected, and my husband fell hard for the seafood pancake, haha.

## The kalguksu I was extra curious about — made in-house

One thing that stood out here was that there's an actual noodle-making room. It's not just a sign on the menu saying 'we make our own noodles' — you can actually see the room inside the store where the noodles are made. Because the noodles are made and aged on-site, the texture was noticeably chewy. I personally dislike that faint flour smell some kalguksu has, but here I barely noticed it at all.

Being kneaded and aged in-house made the noodles firm yet chewy. Even though kalguksu is usually the 'finishing menu' after shabu-shabu, here the noodles themselves were genuinely delicious in their own right. Watching them being made in person also made me trust the place more.

Since it's summer, we even got minari (water dropwort) plus kong-simchae (water spinach)! I was really looking forward to the kong-simchae 💚 The side vegetable spread was excellent. Add some spicy peppers and you're truly ready to eat.

## The crispy seafood pancake is genuinely crispy

And the crispy seafood pancake my husband insisted we order, ₩16,000. True to its name, it's really crispy. The outside is crunchy and savory, while the inside is packed with a good amount of seafood.

The shrimp especially are huge. Forget the small shrimp you usually find in seafood pancakes — these are big enough to make you wonder 'wait, is this a prawn?' haha.

The seafood was so generous that every bite had real texture. Picking off a piece here and there while eating shabu-shabu, I kept reaching for more. My husband loves seafood pancake, and he was thoroughly satisfied that day.

## The shabu-shabu is genuinely delicious

Vegetables are the key to good shabu-shabu, of course. Everything was fresh that day, which I loved, and the meat was tender, making it easy to eat with a kid too. Boil the broth, drop in vegetables and meat, and pull them out one by one — before you know it, the pot is packed full. My kid had been begging for shabu-shabu and ate it with total satisfaction. Letting the kid pick the menu really does lower the odds of a miss, haha.

## The genuinely delicious flat kalguksu

The secret weapon of this Yongin favorite, Yun Ujae Shabu Kalguksu — the flat kalguksu! It's seriously, seriously good. My kid finished the whole thing. That's a sign it's the real deal!

Finish it off with the genuinely tasty fried rice and your stomach will burst. Absolutely burst.

## From house-made noodles to fresh ingredients

After eating here, I could kind of understand why this place is known for its kalguksu. The shabu-shabu itself had fresh vegetables and tender meat, but the noodles I ate at the end were what stuck with me most. Since the noodles are made in the store's own noodle room and aged before use, they were chewy and springy, with almost no flour smell. Simmered in the shabu-shabu broth, the noodles soaked up the flavor really well. Eating in the order of shabu-shabu, then meat and vegetables, then kalguksu makes for a very filling meal. Add the crispy seafood pancake on top, and it was plenty for a family meal for three.
