We found it because we were craving a hearty Korean meal. The cabbage buckwheat pancake included as a basic side is especially good: the golden-brown buckwheat pancake and cabbage come together in a nutty, clean-tasting bite. It was a lovely light appetizer before the main seasonal grilled-fish meal arrived, and the well-rounded Korean side-dish spread makes this a great restaurant to bring parents to. Except for the cabbage buckwheat pancake, all the basic side dishes can be refilled freely at the self-service bar. It was kept clean and stocked generously. It was convenient to get as much as we wanted without feeling self-conscious about running out during the meal. Along with side dishes, the bar also has warm japchae (stir-fried glass noodles) and doenjangguk (soybean-paste soup). Sometimes eoriguljeot can have bits of oyster that feel distracting or a distinct fishy taste, but Min Cook Apbadang’s was soft to chew with no unpleasant texture or fishiness—it was truly delicious. Its savory saltiness and umami were so good spooned little by little over warm sotbap; it was the ultimate rice thief. Every table at Min Cook Apbadang Seongsa has a stainless-steel grill plate and induction burner. Grilled fish cools down so quickly over time, but this lets you keep every last bite warm and enjoy it even more. The flesh was beautifully plump, snowy white, and moist—so delicious. Golden and crisp outside but tender inside, it was even better with the warm sotbap. As you would expect from a Seongsa-dong restaurant specializing in seasonal grilled fish, it let the fish’s own flavor shine. Disposable gloves are also available at the self-service bar, making it easy to remove the fish bones. The grilled mackerel comes as a whole fish too, and its flesh was wonderfully plump. The outside was golden and crisp, while the inside was moist and tender, making it perfect with rice. It retained mackerel’s characteristic nutty richness without any fishiness at all, so it was a clean and easy meal to enjoy. After scooping out the rice, you pour in hot water; as you eat, it turns into warm, nutty sungnyung (scorched-rice tea). It is personally my favorite way to finish a Korean set meal or grilled-fish set. With thick grilled fish and freshly cooked sotbap, followed by comforting sungnyung, it really felt like a properly hearty meal.
