Since raw beef isn't grilled or cooked, freshness matters more than anything. The beef had enough tackiness that it barely shifted even when I tilted the plate, which made the freshness obvious just by looking. I dipped a piece in the garlic sauce that came with it. The sharp garlic aroma and savory taste brought out the raw beef's flavor even more.
