I went out to Gwacheon on the weekend for a Danggeun Market (secondhand app) pickup and stopped by Minimale Coffee Roaster Gwacheon Knowledge Information Town Branch for coffee and some good bread. Cafés are popping up one by one around Gwacheon Knowledge Information Town, and this one has a pretty wide bakery lineup on top of coffee, so I wanted to introduce it to anyone looking for a Gwacheon café bakery :)

It's an area full of office workers on weekdays, so on the weekend afternoon I visited, the building felt pretty relaxed. What I especially liked was the parking! The basement lot is generously sized, so I didn't have to circle around looking for a spot, and café customers get 3 hours free. A lot of cafés these days only give you about an hour, so 3 hours is great for lingering over coffee and conversation!

## Inside Minimale: seating and the bakery display case

Walking into Minimale Coffee Roaster, the whole space felt clean and clutter-free! I came in just planning to have coffee but ended up agonizing over the bakery case for a while. Some weekend guests were eating in the café, and a lot of delivery orders were coming in too. I guess with so much good bread, people order delivery on weekends~

From salt bread to babka, cookies and tarts, there was quite a variety of pastries that looked great with coffee. The salt bread alone came in several types — sweetened condensed cream, jambon cheese, buckwheat, and more.

There were cakes too, not just bread. So many pastries looked more delicious than I expected — I had a hard time deciding what to get!

### What kind of bread is babka?

I'd never seen babka before — apparently it's a sweet bread that originated with Eastern European Jewish communities, made from a soft butter-and-egg dough spread with fillings like chocolate or cinnamon, then rolled and twisted before baking.

The layers were beautifully visible, looking really appetizing, and the filling packed inside was dense enough to give a moist, rich flavor. It seemed like it would pair well with coffee, so I picked one up!

Minimale Coffee Roaster's buckwheat salt bread has a slightly nuttier, more savory character than regular salt bread, probably thanks to the buckwheat. The inside had that moist, chewy salt-bread texture, and the buckwheat on top gave a nice bite.

Rather than hitting hard with heavy butter flavor, it's the kind where a mild butteriness is followed by a salty finish, which went really well with coffee. Recommended for anyone who likes salt bread or plain, savory breads. Thanks to the buckwheat, it had a slightly toastier flavor than regular salt bread, making it a nice, somewhat different treat.

Minimale Coffee Roaster's original babka has visible layers with chocolate running through them, so each bite gives you the bread's moistness along with rich chocolate flavor together. Almonds on top add not just sweetness and softness but bursts of nutty flavor and texture throughout!

It's definitely sweeter than the salt bread, so ordering both together was a good combo. A bite of the savory buckwheat salt bread → coffee → a bite of the sweet babka — alternating like that worked really well.

Minimale Coffee Roaster's signature Helsinki latte feels much smoother and creamier than a regular café latte. The milk's nuttiness comes through fairly strong while the coffee's characteristic bitterness doesn't spike, making for a really smooth-drinking latte overall. The decaf americano was a solid, safe choice that paired perfectly with the bread.

## Is Minimale worth a stop in Gwacheon?

Next time I go back to Minimale Coffee Roaster, I'll have to try the other babka flavors and the egg tart haha.
