Walking through Seochon, you keep noticing little cafés tucked between the alleys that make you want to linger. This time I visited Respire Bakery Cafe Seochon (레스피레베이커리 서촌), a spot where you can enjoy bread and coffee together.

From the white, aged building it's built into, to the wood-and-vintage-prop interior, it has a different mood from the neatly styled cafés you see everywhere these days. And out of everything I tried, the salt bread was honestly the most memorable.

## Respire Bakery Cafe Seochon's exterior — a small bakery tucked into an alley

Respire Bakery Cafe Seochon catches your eye deep in the Hyoja-ro13-gil alley, with its white wooden building and wood deck. I liked it from the very first look.

It's mostly white-toned overall, but awnings and green plants scattered around keep it feeling warm and cozy rather than cold.

Walk around the side of the building and there are outdoor tables lined up along the white wall. It felt warm, a bit like an old small European restaurant.

What was especially fun was the handwriting and illustrations scattered across the walls and the fence next door. From spots with little notes about bread like 'TODAY'S BREAD' to cute characters, small drawings, and menu info — it looked like someone had just doodled straight onto the wall.

Rather than a polished, precise interior, it's a bit crooked and free-hand — and that made it even cuter.

## 1st and 2nd floor seating — keeping the feel of an old building intact

### The 1st floor, even better with the doors thrown wide open

Respire's 1st floor is a space of wood tables, rattan chairs, and warm lighting. It's not shiny-new looking overall — there's a texture like time has settled into it, which made it more comfortable.

The day I visited had nice weather, so the 1st floor doors were wide open. That let the outside view flow right into the indoor space and made everything feel much airier. The counter area is also done in wood tones, so the whole mood flows naturally together.

With plants and vintage props scattered around, I found myself slowly looking around even after finishing my bread.

Upstairs, the mood shifts a little. Big windows let in the outside view, and rattan chairs with wood tables make it a good spot to sit quietly.

On one side there's a large painting hanging, plus a long wood table.

By the window there are magazines set out too, making it a nice spot to rest for a bit over a cup of coffee.

At Respire, the breads sit one by one on wooden display shelves, and even the menu board is handwritten, so it's fun just to browse.

From various salt breads to ciabatta and other meal breads, the selection was more varied than I expected. If you like salt bread, this is a lineup you'll want to look through piece by piece. Menus like mentaiko potato salt bread and garlic cream cheese salt bread — variations on the plain salt bread with different toppings — also stood out.

The lineup felt good for more than just grabbing a single piece of bread — it works well for a simple meal alongside coffee.

## Cucumber dill sandwich and caramel crème, good for a Seochon brunch

What I ordered at Respire that day was caramel crème + salt bread + cucumber dill sandwich. I was going to just do coffee and bread, but adding the sandwich made it a pretty filling meal.

The cucumber dill sandwich comes loaded with thin cucumber slices on top, with tuna and vegetables underneath. The crisp texture of the cucumber hits first, and the dill flavor was milder than I expected. Instead, what lingered subtly at the end was that fruity pink pepper aroma, which made the overall flavor feel a bit fresher.

You could feel the bread, vegetables, and filling textures all together, which made it light to eat. Personally, I think even people who don't love strong herb flavors could eat this comfortably.

And the drink that impressed me more than expected was the caramel crème. Visually it has a bit of a crème brûlée feel, but when I actually drank it, it wasn't nearly as sweet as I thought. There's a slight saltiness added to the caramel sweetness, so the sweetness doesn't tip too far one way. Above all, the caramel cream itself was really delicious. With the soft cream and coffee coming through together, I think this would suit anyone who likes a sweet dessert coffee.

## Respire's pie-crisp-bottomed salt bread, ₩3,000

The star of the day was, of course, the salt bread. It's known as one of Respire's signature items, and after trying it myself, I get why people seek it out. The plain salt bread is listed at ₩3,000.

First of all, the bottom was really striking. It's baked pie-crust crisp on the bottom, so the crunch sound when you bite in is different.

Crisp on the outside, soft inside, with a good sense of buttery flavor and saltiness. I like salt bread quite a lot and have tried it at many places, and honestly, this was the best salt bread I've had so far.

What especially stuck with me was that crisp bottom texture, compared to salt breads that are just soft all over. Paired with coffee, the combo of sweet caramel crème and salty bread worked well too. So if you're looking for salt bread in Seochon, I think this is worth a visit at least once.

A selfie in front of the mirror is too good to pass up! With the wood wall and photos pinned up around it, it's a spot that really captures the café's mood.

## Would I go back for Seochon brunch? Final thoughts

Respire felt better suited to ordering coffee and a sandwich and settling in for a while, rather than just grabbing bread to go quickly. Out of what I tried, the caramel crème, the crisp salt bread, and the cucumber dill sandwich were the three that stuck with me.

Of those, the salt bread's pie-crisp bottom texture was really impressive. If you're walking around Seochon and craving coffee and bread, and want somewhere to sit and take it slow, this is worth adding to a Seochon brunch route. Next time I'd want to try a different type of salt bread.
