매장 입구 쪽에는 비지도 가져갈 수 있게 두었는데 내가 간 날은 없었다! 비지는 사장님께 여쭤보면 될 듯.

### 초당이란

> 초당두부가 생산되는 강릉에서 천일염이 생산되지 않기 때문에 소금 대신 동해바다의 깨끗한 바닷물을 간수로 이용하여 만든다. 소금 대신 바닷물로 간수를 대신한 것이 이곳에서 살았던 강릉 부사 초당 허엽의 아이디어였는데, 허엽은 관청 앞마당에 있는 샘물로 두부를 만들고 바닷물로 간을 맞춰 두부를 만들었고, 이것이 맛 좋기로 소문이 나서 허엽은 자신의 호를 붙여 초당 두부라 이름을 지었다.

깨끗한 바닷물을 간수로 이용해서 순두부를 만들고 100% 순수 국내산 콩을 사용한다니 맛이 없을 수가 없군!!👍

대청마루는 순두부 한 그릇에 반찬이 상 가득하게 나온다. 그중 내 취향은 간장 새우였고, 두부무침·황태무침·비지도 함께 나왔다.

두부 무침도 간장과 함께 나오고, 두부가 국내산 콩을 사용해서인지 담백하고 너무 맛있더라!! 황태 무침도 역시 황태를 전문으로 하는 곳이라 실망시키지 않는 맛이었다!

비지도 함께 반찬으로 나오는데 이것도 진짜 별미다. 콩의 고소함과 부드러움, 짭조름함이 이것만 있어도 밥 한 공기 뚝딱일 듯?!

## 초당순두부는 어떤 맛?

대청마루 초당순두부(14,000원)는 그릇 크기만 해도 양이 꽤나 상당하다. 간이 세지 않아 순두부 본연의 깔끔하고 고소한 맛이 그대로 느껴진다.

한 숟갈 떠먹자마자 부드럽고 몽글한 식감이 좋았고, 자극적이지 않고 고소하고 담백해서 아 이래서 초당순두부가 유명하구나 이유를 알 수 있었다!! 포만감도 있어서 아침식사로 먹기에 부담이 없다!

간이 세지 않아서 순두부 본연의 깔끔한 맛을 제대로 느낄 수 있었다. 두부 무침과 함께 나온 간장을 취향에 맞게 조금씩 곁들여먹으면 짭조름한 감칠맛이 더해져 또 다른 맛으로 즐길 수 있다!
