Visiting on a Thursday at 7pm, the writer took the staff's recommendation and ordered the Gim Sukseong Special 2, a two-person set of pork neck, pork belly and gabrisal, served with aged kimchi, minari and spicy marinated crab as the standard banchan. Staff grill every cut at the table, so all you do at Gim Sukseong is eat each piece at its best moment.
