Cheongpyeong butcher, rainy-day pan-grilled pork neck: Ari Chuksan
Ari Chuksan is a hanwoo (Korean beef) auction and butchery shop at 23 Gangbyeon-ro in Cheongpyeong, Gapyeong, right on the route to pension rentals in Gapyeong, Cheongpyeong and Chuncheon. On a rainy pool-pension trip, the writer picked up just over a geun of 2cm-thick pork belly, 1kg of 2cm pork neck and a pack of pork back ribs, plus shredded scallions for 500 won and garlic for 2,000 won, then cooked it all indoors on a pan. The thick pork neck came off the pan medium rare, juicy instead of dry, and the friends at the table raved about it.
