Hapjeong pork bone kalguksu with egg ribbon topping: Pyeongidambaek
Pyeongidambaek Ppyeo Kalguksu Main Branch (평이담백 뼈칼국수 본점) is a pork bone kalguksu (knife-cut noodle soup) and bossam (boiled pork with wraps) restaurant sitting halfway between Hapjeong and Mangwon stations in Mapo, Seoul. The pork bone kalguksu arrives under a blanket of shredded egg ribbons in a clean meat broth that never turns heavy, and the bossam suyuk uses five-layer pork belly cut into irregular slices, tender and free of any gamy smell. Pyeongidambaek won the writer over with the pork rather than the noodles, so the next visit is booked for bibim kalguksu and another plate of suyuk.
