All Mind is a single-location Korean restaurant in Jincheon that serves marsh snail haejangguk and potato ongsimi using recipes from the owners' parents, who ran restaurants in Gangwon-do for 30 years. All Mind's base broth is simmered every day from about 20 domestic ingredients, including Sokcho dried pollock heads, anchovies, dried shrimp, shiitake mushrooms, kelp, radish and onion. All Mind's haejangguk contains wild marsh snails (olgaengi, also called daseulgi) from the Donggang River in Yeongwol and the Namhangang River, cooked with mallow and winter cabbage.
All Mind's ongsimi is a vegan dish made only from potatoes and a little salt, with potatoes from Pyeongchang, Yeongwol, Dangjin and elsewhere grated by hand every morning; All Mind offers it in two versions, ongsimi only and ongsimi with kalguksu noodles. At All Mind, potato pancakes are grated and pan-fried to order, the rice is cooked with Jincheon rice, and the kimchi comes from Taebaek.
