Magok sushi restaurant, white fish set and fiery wasabi saba: Ilpum
In short
Ilpum Magok is a Japanese sushi restaurant at 228 Gonghang-daero in Gangseo, Seoul, near Exit 4 of Magok Station. On a couple's third visit to Ilpum Magok, the usual white fish sushi set satisfied again, but the first-time shime saba bar sushi (vinegar-cured mackerel bar sushi) had very strong wasabi inside and came out late. If you order the shime saba bar sushi at Ilpum Magok, ask ahead about the amount of wasabi and how quickly the dish will be served.

What is the atmosphere like inside Ilpum Magok?
The inside of Ilpum Magok is clean and cozy, modern but with warm wood tones. It's a stylish space where you feel looked after just by sitting there.

The first thing you notice when you open the door is the tidy, cozy interior with no fuss. Built on modern yet warm wood tones, it feels both neat like a proper Japanese restaurant and quietly upscale.

Private tables and an open counter
The tables are generously spaced, so you aren't bothered by the conversation next to you and can focus on your own meal. Soft white lighting falls gently over the table, which makes the food look even more appetizing and the photos come out really pretty.

Counter seats for solo meals and dates, tables for groups
At the bar counter (dacchi seats) you can watch the chef shape the sushi right in front of you, which is perfect for a solo meal or a couple's date. The private table seats inside are just right for treating someone special or for a family gathering. Overall it aims for a sincere, calm mood rather than flashy glamor, so you feel comfortably taken care of the whole time.

It's a very popular sushi spot in Magok, so keep in mind that there may be a short wait at peak times!

Why we order the white fish sushi set at Ilpum Magok every time
The white fish sushi set is our favorite, and every time we go to Ilpum Magok we order it without even looking at the menu. It's our forever number-one recommendation, and it impresses us so much each visit that we never stop praising it to friends.

Aged white fish with a thick, springy bite
The white fish sushi in the set has exceptionally fresh neta (the fish topping). The thickness that fills your mouth with one bite, plus that chewy, bouncy texture, is honestly art.

Maybe it's some secret aging process, but the more you chew, the more the fish's subtle, nutty sweetness comes through.

Well-balanced rice and a clean finish
Unlike fatty cuts, the light, clean taste of white fish strikes a perfect balance with the properly seasoned vinegared shari (rice). You never get tired of it from the first piece to the last, so I can confidently say it's the menu item that shows the essence of Ilpum Magok's sushi.

Shime saba bar sushi at Ilpum Magok: an honest first taste
This time we wanted to try something new besides our usual, so we ordered the shime saba bar sushi (vinegar-cured mackerel bar sushi) that we'd always been curious about, for the first time. We were excited, hoping for the rich, nutty flavor of carefully vinegar-cured mackerel.

When it arrived at the table, it was glossy and quite thick, and looked really appetizing.
The letdown: a sharp punch of wasabi inside the mackerel
The freshness and preparation of the mackerel itself were excellent. The fishy smell was cleanly handled, so the heavy, deep flavor typical of mackerel bar sushi really came through.

But there was one thing I have to be honest about: the wasabi inside the sushi.
My husband and I usually enjoy piling fresh wasabi on top and handle that sharp heat very well. Still, maybe to counter the oily richness of the blue-backed fish, the wasabi inside this one was extremely assertive.

With the first bite, it went beyond sharp and the heat hit so suddenly that my stomach almost hurt, which really surprised me. In the end we took the mackerel and rice slightly apart and scraped off some of the wasabi inside before we could finally enjoy it comfortably.

Mackerel bar sushi does tend to get a generous amount of wasabi, but if you don't handle spicy food well or need to control your wasabi, I strongly recommend asking for less wasabi before you order! If the wasabi is adjusted to your taste, I think you can enjoy the mackerel's nutty, excellent quality much more happily.
How were the udon and dessert served with the sushi set?
At Ilpum Magok, hot udon and dessert follow the main sushi in the set. It's a lineup that raises the class of the whole meal.

What makes the set at Ilpum Magok shine even more is the hearty, carefully made sides and finish that continue after the main sushi is done.

Udon in a deep, rich katsuobushi broth
While eating sushi you naturally start craving something hot and brothy, and the udon served with the set does that job perfectly. It's not a half-hearted set side: the noodles are chewy and the katsuobushi (dried bonito) based broth is deep and richly simmered, really done properly.
Toward the end of the sushi, a sip of the hot udon broth warms and settles your mouth and pleasantly fills out the meal.

A dessert to round off the meal
When the meal is over, a carefully prepared dessert is served. Sweet and clean on the palate, it even softened the strong wasabi heat from the shime saba sushi earlier, so we could finish the meal on a happy note. Everything from the main dish to dessert flows like one structured course, so you end up really full and satisfied.
Verdict: what to know before ordering at Ilpum Magok
There were a few differences of taste and small disappointments with some dishes, but Ilpum Magok lives up to its name with its excellent ingredient freshness and heartfelt craftsmanship. Especially thanks to the white fish sushi set, which moves us just as much every time, and the clean interior, we had a satisfying date again this time.
One more thing: the shime saba bar sushi took a long time to cook. It came out around when we'd finished the white fish sushi ^^;; If you're eating with someone you're not close with, I think you should ask in advance for the dishes to be served at a matched pace. (They don't tell you about this beforehand, so keep it in mind.)

If you want the full course, with the happiness of a neat Japanese meal, hearty udon and sweet dessert, why not take someone special to Ilpum Magok this weekend for a happy food trip?
