A quick aside: what is Nanchuk Matdon? It is a premium black pork breed with about 4 times the intramuscular fat (marbling) of ordinary pork, spread evenly, so it has great marbling, flavor and a tender texture.

What we ordered: raw ribs 600g and two bowls of noodles

We ordered one 600g plate of raw ribs (₩56,000), young radish noodles (₩8,000) and bibim noodles (₩8,000).

The marinated raw crab (yangnyeom gejang), full of meat, with a spicy-sweet, deeply savory sauce. It made me want to order a bowl of rice, but the noodles looked so good that I held back, haha

Matcha salt and meljorim (braised anchovy-like fish) came out too.

600g raw ribs with the grilling service

A glossy, fresh plate of 600g raw ribs (₩56,000) came out with scallions and king oyster mushrooms.

The restaurant uses real charcoal, so the meat picks up a smoky aroma and the flavor was even better.

Since the grilling service is provided, we could chat with our group and eat comfortably.

The table has instructions on how to properly enjoy Pork80's pork, and following them is a lot of fun. The grilling service is normally only for Nanchuk Matdon, but they grilled the raw ribs for us too, haha

First, dip it lightly in the matcha salt: it cuts the richness and lets you really taste the meat itself.

Topping it with a little fresh wasabi is also delicious. There was no gamey smell at all and the juices burst out, so it's easy to see why this place has a reputation.

As for meljorim, it's usually too salty to dip in much, but Pork80's was so well balanced between sweet and salty that it would be good even mixed into rice.

Whether you eat it with the seasoned radish, the pickled onion, the scallion salad or the cabbage salad, the meat itself is so good that everything works, haha

In this weather, nothing makes a better meal than these young radish noodles (yeolmu guksu, ₩8,000), and they were deeply satisfying.
