Starting in a small alley in Seomyeon, Busan, Hubaldae has been loved since 2010 and has always been a restaurant with a line out the door — and now it's landed in Jongno, Daegu. A line-worthy favorite steadily loved since 2024! Let's start the honest review right now.

How to skip the wait: the weekday 5:30pm reservation
Hubaldae Daegu Jongno Branch takes Naver N Reservations for the opening time slot from 17:00 to 17:30. I booked a weekday 17:30 slot and arrived about 10 minutes early, and by around 5:50pm the place was already full.
★Tip★ I highly recommend the Naver N Reservation to skip the wait. For other times, check the reservation guide.
It's also famous as a favorite dinner spot for baseball players, so there were plenty of signed baseballs and autographs on the wall.
Service at Hubaldae, from sitting down to leaving
At Hubaldae Daegu Jongno Branch, you get top-notch service from the moment you sit down until you walk out. They store your bags and drape a cloth over them so oil splatters don't reach them,

they tear off wet wipes and set them right in front of you, portion out the scallion salad onto your side plate, and bring you an apron. Truly the best service! On the way out after paying, they even sprayed deodorizer near the entrance. Such thoughtful service!

If you sign up for Naver alerts, you get a buy-one-get-one coupon for the Blue Rye Ball drink, and I noticed a lot of other tables ordering the new summer menu item, arrowroot bone-broth pear naengmyeon (cold noodles) — rich beef bone broth with the sweetness of chilled pear for an even cleaner finish. Beyond that, the special ramen and K-dessert fried rice on the side menu all looked delicious too.

Side dishes, potatoes and kimchi jjageuli (kimchi stew)
The basic side dishes come out clean, and even the wild garlic leaves (myeongi namul) are cut into easy-to-eat sizes. The potatoes come out generously — never scarce. Kimchi jjaglagi (thick kimchi stew) also comes alongside, and it's a delicacy among delicacies!

They grill the basil once for you, and as the red arrow shows, they take out the stems entirely and grill it deliciously.

The staff grill the meat for you, carefully timing when to flip and how done to cook it — a totally different taste from grilling it yourself at home.
Professional grilling locks in the meat's juices while giving the surface a mouthwatering charcoal aroma and crust. One bite in, and you immediately understand why people line up for this place.

While eating the meat, skip the fizzy cola and try slurping this mul kimchi (water kimchi) instead!!! With slushy ice floating in it, it cools you right down to your core. K-digestive aid >__<

The honey potato wrap and basil wrap combo
They prepare the country's only signature honey potato, and you can wrap your meat however you like with wild garlic leaves, angelica, kimchi jjaglagi, scallion salad, wasabi, garlic, and more — a special, delicious kind of fun.

Grilled daechang, which pairs incredibly well with chives and wasabi.

Crispy outside, chewy inside daechang. The more you chew, the more that distinctive rich, savory flavor of daechang comes through, with juicy, savory flavor bursting out.

The charcoal aroma is deeply infused into the meat, so you get that rich flavor from the very first bite.

The subtle basil aroma comes through and it's genuinely delicious. The owner is a true food genius!!! Basil, wasabi, and honey potato all together?! ㅠㅠㅠ That honey potato is really the killer touch!!!!

The meat itself is so delicious that any combination works — very good!!!!

The special fried rice has meat mixed in, which made it even better. The meat itself is completely tender with a subtle charcoal aroma, and since the pros handle even the grilling process, you get to eat it at its very best moment — Hubaldae, a pork belly and daechang restaurant in Jongno, Daegu. Definitely worth a visit^00^.
