Arriving at peak time meant a 10-team wait at the door, but the towering Ppyeoberest beef bone hot pot came with a special seasoning sauce and finished with kalguksu noodles and gondre herb rice porridge. The wait at Hyoeunok is real, yet meat that slides straight off the bone and a deep, rich broth make the reason obvious.
