Hello everyone~~~ 🩷

Lately every evening I get this weird craving for meat loaded with smoky char, does anyone else get that?? ㅜㅜ And when that happens, charcoal-grilled pork belly is the golden rule!! So this time I, Swan, ran all the way to Cheolsan..... to Snug Roastery, the Cheolsan branch!!

It'd been a while since I grilled up some sizzling pork belly for dinner, and long story short, this was a really, really great choice of a day ❤️

Where is Snug Roastery Cheolsan and when is it open?

The red neon sign is visible from far away, and the brick exterior gives off such a hip, industrial feel! One surprising fact... this place is open 24 hours!! A place you can go when you're craving pork belly at dawn — totally awesome 👍

What's on the self-serve side dish bar?

The side dishes at Snug Roastery, Cheolsan branch run on a self-bar system — lettuce for ssam wraps, refreshing scallion salad, wild garlic leaves, garlic, and kimchi, all yours to take as much as you want, which was great!

There are also three sauces — ssamjang, salt-sesame, and wasabi — and honestly, the salt and wasabi combo with pork belly is basically the golden rule, hehe

Briquette pre-grilled pork belly and pork neck

Now for the main event!! On the bright red charcoal fire, whole cuts of pork belly and pork neck sizzle away as the staff pre-grill them for you, and the charcoal aroma is just insane ㅜㅜ True to being a pork belly and neck specialty spot, the meat's color stood out from the start!

The meat was so plump and hearty!! Sliced into thick pieces, crisp outside and juicy inside, with the juices practically bursting 🤤 They grilled it together with king oyster mushrooms too, which was a nice bonus.

Eating it with the tangy scallion salad cuts right through the richness, and it's magic how it just keeps going down!!

How the free makguksu and steamed egg taste

Oh right, and then!! The makguksu (buckwheat noodles) arrived too ㅜㅜ Chewy buckwheat noodles with a tangy-sweet gochujang sauce, topped with perilla leaves and crunchy cabbage, red cabbage, and seaweed! I mixed it all up and took a bite — the tangy, spicy kick totally woke up my taste buds and cleared out the richness in my mouth 🤤 Alternating between that and the meat was seriously the perfect combo... 👍

And next to it, the steamed egg was puffing up all fluffy!! Steam rising off it too, the visual was seriously amazing 😲 So fluffy and moist that this steamed egg is now my number one favorite — I seriously recommend it!!!!

Finishing with kimchi fried rice

And of course the finale has to be fried rice!! Kimchi fried rice sprinkled with seaweed flakes and topped with a fried egg... rice infused with smoky flavor, mixed with a burst yolk — I finished it in no time even though I was already full ㅋㅋㅋ Would've been such a regret not to order this 😭
