One of the first foods that comes to mind when you think of Daejeon is kalguksu (knife-cut noodle soup). Daejeon has no shortage of long-running kalguksu spots, and among them, Sindo Kalguksu Jungchon branch is one that locals keep coming back to haha!!

The remodeled dining room and self-serve bar

Sindo Kalguksu Jungchon branch has finished remodeling and now feels spacious and comfortable overall. True to a Daejeon kalguksu favorite, plenty of customers were in for lunch, enjoying everything from kalguksu to kongguksu. The tables were spaced generously too, so there was no sense of crowding while eating.

The self-serve bar is kept neat too, with yeolmu kimchi and two kinds of pickled radish on offer. They paired really well with the kalguksu~!

Here's the menu at Sindo Kalguksu, a Jungchon-dong, Daejeon favorite. They have Sindo kalguksu, suyuk, tofu duruchigi, bibim guksu, and summer-only kongguksu~! I ordered the extra-large Sindo kalguksu and the extra-large kongguksu.

How is the summer-only extra-large kongguksu?

The kongguksu at Sindo Kalguksu Jungchon branch is a summer-only item. Served extra-large, the soy milk looked so rich just by the look of it, full of nutty flavor.

On the first bite, the deep, authentic flavor of soybeans came through clearly, without being artificially sweet or sharp — very satisfying.

Eaten together with the noodles, the soft, nutty flavor filled the mouth, making it the perfect dish for when you've lost your appetite in the summer heat. Ordering it extra-large meant a generous portion, plenty for a full meal.

The signature Sindo kalguksu, true to being extra-large, came in a really generous portion. Even as someone who loves noodles, I was completely full after finishing the bowl.

The kalguksu noodles weren't overly soft and kept just the right chewiness, which made for a great texture. But what stood out most was the broth. The refreshing anchovy stock and the rich beef-bone broth blended naturally, giving a clean yet deep flavor.

It wasn't too salty, so I could drink it right down to the last spoonful without feeling heavy, and it had that addictive quality that keeps you thinking about it~! Pairing it with the well-fermented yeolmu kimchi was the finishing touch, haha.

A Daejeon kalguksu favorite that delivered on rich broth, generous portions, and clean flavor all at once. If you're looking for good kalguksu in Daejeon, I'd recommend giving Sindo Kalguksu Jungchon branch a try at least once~!!
