Now that the weather is getting cooler, I keep thinking about meat turning golden on a charcoal grill. One evening not long ago I was craving tender beef galbi (ribs), so I headed to Seosin-dong in Jeonju. The meat quality, the charcoal aroma and the spread of side dishes all won me over, so I had to introduce this Jeonju meat restaurant: Ubookgeum Saenggalbi Seosin Branch.

What are the exterior and atmosphere like?
The "Saenggalbi" sign glows under soft string lights, so you can spot it from far down the Seosin-dong street. I came after work, and it looked clean and neat from the outside. The building and even the garden-like flower bed around the entrance are tidy, so I thought it would suit a family meal or a date too.


How do you order, and what is the receipt review event?
Every table has a charcoal brazier and a tablet ordering system, so ordering was easy. The staff greeted us kindly when we walked in. There is also an event: leave a receipt review and get a free soju, beer, naengmyeon (cold noodles) or bean sprout stone pot, so don't forget to check it out!

What side dishes come out?
The basic spread includes seasoned bean sprouts, pickled onion, pickled mustard greens and dongchimi (radish water kimchi), plus doenjang jjigae (soybean paste stew) and steamed egg in a stone pot. My jaw dropped at how quickly it was all set the moment we sat down. The neat dishes filled the clean wooden table.







Crunchy, sweet-and-spicy seasoned bean sprouts, pickled onion, pickled mustard greens, dongchimi, a bubbling doenjang jjigae and a hearty steamed egg all come as standard!

The steamed egg puffed up fluffily in its stone pot, and a big spoonful was soft and crumbly, perfect for settling the stomach before the meal.

The doenjang jjigae was packed with tofu, zucchini and radish, and the broth was rich and spicy-sharp, a fantastic match for the beef galbi.

What does a plate of marinated beef galbi taste like off the charcoal?
Both the pork galbi and beef galbi are famous here, but today we specially ordered the marinated beef galbi (one plate) with its sweet-salty marinade. I gasped as soon as the plate arrived. Delicate cuts ran through the light pink grain of the meat, and you could see with your own eyes that the marinade had soaked in.

As soon as I laid the galbi piece by piece on the hot charcoal grate, the charcoal smoke and a savory marinade aroma spread softly. As the meat cooked, juices and a glossy sheen of marinade rose on the surface, and it was really hard to wait.

The first piece, plain with no dipping
I put the first piece of well-cooked marinated beef galbi in my mouth without dipping it in anything. It was so tender it practically melted away after a few chews. The balance of charcoal smoke and a sweetness that is pleasantly not salty was excellent, and I immediately understood why so many people call it a top Jeonju meat restaurant.

Next I laid a golden piece of galbi on fresh lettuce, added sharp garlic, crunchy sprout ginseng and pickled onion, and made one big wrap. The savory juices, pungent garlic and fresh pickled onion filling my mouth were simply moving!

Finishing by gnawing the meat off the bone
Finally, you can't miss the fun of grilling the meat still attached to the rib bone until crisp, then picking it up and gnawing it off. The chewy, nutty flavor of the meat near the bone burst out more with every bite and finished the meal perfectly.
