Jangan-dong pork belly spot with free egg soufflé: Donbyeorak, Seoul

In short

Donbyeorak Kimchi Samgyeopsal Jangandong Main Branch is a Korean BBQ restaurant near Jangan-dong intersection in Dongdaemun, Seoul, in the same spot for 19 years. A couple came by on a Tuesday after work for two servings of samgyeopsal (grilled pork belly), one of hangjeongsal (pork jowl), cold noodles and flying fish roe fried rice, with a complimentary gyeranjjim (steamed egg) on the side. The antibiotic-free Korean pork with five-step-aged Haenam kimchi was the highlight, and with two high chairs and a park next door, Donbyeorak works for family dinners too.

The kimchi is the real star: what five-step aging does

Donbyeorak Kimchi Samgyeopsal's biggest weapon is, without question, the kimchi! This place takes its kimchi so seriously it feels like it was made by a kimchi master.

Domestic Haenam cabbage: They say they only use kimchi made directly in-house with domestic Haenam cabbage, known for its outstanding texture.

A five-step in-house aging process: They manage the kimchi themselves through a meticulous five-step aging process. Thanks to this, when grilled in pork fat, it hits an ideal aged state where the savory flavor just explodes.

Honest review: pork belly, pork jowl, cold noodles and fried rice

We ordered two servings of samgyeopsal (pork belly), one serving of hangjeongsal (pork neck), and as sides, cold buckwheat noodles and flying fish roe fried rice.

Samgyeopsal and hangjeongsal: antibiotic-free Korean pork

We piled thick slices of pork belly, pork neck, and plenty of the five-step-aged Haenam kimchi onto the grill.

Maybe because it's antibiotic-free pork, it was full of juice with absolutely no gamey smell. Especially the moment we wrapped a well-cooked piece of kimchi with pork belly — the spicy-tangy kimchi and the savory meat came together perfectly.

The hangjeongsal, too, had that signature slightly chewy texture and savory flavor — just artful.

The free gyeranjjim (steamed egg), tall and fluffy

While we were happily waiting and grilling meat, a rich, fluffy egg soufflé (gyeranjjim) arrived, on the house.

It was soft and airy with just the right seasoning — a perfect match eaten alongside the meat.

Cold noodles to cut the richness

The side dish that cut right through the greasiness of the meat — cold buckwheat noodles! Well-cooked noodles slurped up in a cool, refreshing broth reset the palate completely.

A must-order in summer or whenever things start feeling too rich.

Finishing with flying fish roe fried rice

On the grill where we'd just finished cooking the pork belly and aged kimchi, they stir-fried rice loaded with flying fish roe.

The popping texture of the flying fish roe, the savory roasted seaweed flakes, and the well-fried kimchi came together so well that even though we were full, we couldn't put our spoons down.

Final verdict: would this couple go back to Donbyeorak?

There's clearly a good reason this place has held onto its spot in Jangandong for 19 years.
