Rainy evening pork belly plus extra galmaegisal at Dojeok Suwon
Dojeok Suwon is a stone-plate pork belly restaurant tucked inside Nahyeseok-geori in Inge-dong, Suwon. On a rainy weekday evening the writer ordered two servings of knife-cut pork belly and one serving of hwangje-deossal (premium galmaegisal cut), with staff handling the initial grilling and cutting, and the scored surface kept it juicy with no gamey smell. The side dish refills are generous enough that pork belly alone never gets boring.
