Namwirye shabu-shabu with half-and-half broth and kalguksu finish
Dadam Shabu Shabu & Wolnamssam Wirye Branch is an all-you-can-eat beef shabu-shabu restaurant on the third floor of G&G Plaza near Namwirye Station in Seongnam, Gyeonggi. On a weekday lunch visit, the writer cooked beef chuck and beef belly in turn in a half-and-half broth, wrapped self-bar ingredients in rice paper for Vietnamese-style rolls, then finished with kalguksu (hand-cut noodles) in the broth once it had deepened. Dadam Shabu Shabu left no room for the porridge or dessert, which makes it a genuinely filling Wirye shabu-shabu meal.
