Ilsan ramen restaurant: softer noodles and uncooked takeout: Gyedan
Gyedan Ramen Ilsan Main Branch is a tonkotsu ramen restaurant on Bamlidan-gil in Ilsandong-gu, Goyang, Gyeonggi. On a Sunday at 5:30 pm, the writer and a friend ordered the Gyedan Ramen in rich broth for 11,000 won, the Motsu Ramen in rich broth for 12,000 won and tamago-bap (egg rice) for 3,000 won, asking the kitchen for softer noodles. Takeout at Gyedan Ramen comes uncooked, so the noodles need 40 to 60 seconds in boiling water at home, but eating in means one bowl three ways: clean broth first, then spicy karai sauce, then tamago-bap.
