Juicy lamb ribs and tender lamb chuck flap, grilled for you by the staff in a lovely space! My review of Jin 1926 Dasan Branch, a satisfying spot for a wedding invitation dinner.
Why I chose Jin 1926 Dasan Branch for our wedding invitation dinner
Jin 1926 Dasan Branch is a lamb restaurant near Dasan Station that specializes in premium chilled lamb ribs, and the writer picked it for a wedding invitation dinner while preparing for the wedding. The biggest reason was that the staff grill the meat, so you can focus on the conversation.
While preparing for the wedding, I've been having wedding invitation dinners one by one. Finding a restaurant where you can eat good food with people you haven't seen in a while and talk comfortably turned out to be harder than I expected. I wanted somewhere with a nice atmosphere and tasty food, rather than a place that's too loud or chaotic.
And the place I chose for this dinner was Jin 1926 Dasan Branch (진1926 다산점)! It's a spot near Dasan Station where you can enjoy lamb, and it specializes in premium chilled lamb ribs. What I liked most was that the staff grill the meat for you. At a wedding invitation dinner, the time spent chatting over the meal matters, right? Not having to scramble around grilling and just focusing on the conversation sounded really good.
When I actually visited, the lighting was soft, the atmosphere was nice, and the lamb ribs and lamb chuck flap were delicious, so I was glad I'd chosen it for the dinner.

The hours work for anything from an early dinner to a late gathering. For reservations or questions, call the restaurant. Since it's near Dasan Station, it's also easy to reach by public transport, and with restaurants and shops clustered around, it seemed fine for an evening meetup too.
I drove that day, and the first thing I was happy about at Jin 1926 was the parking! I used the building's underground lot, and there were plenty of floors and plenty of spaces. No circling around looking for a spot, so I could park comfortably.
Parking near Dasan Station can sometimes be a bit of a worry when you drive, but this day I could visit without that stress. For people coming to a wedding invitation dinner or an evening meetup like me, parking convenience matters too, right?
Is Jin 1926 Dasan Branch good for a group dinner? Atmosphere and seating

The interior of Jin 1926 Dasan Branch has soft lighting that feels upscale yet calm, with both regular table seats and bar seats. I was told the seating works for anywhere from 2 up to 20 people, which suited a gathering like a wedding invitation dinner where conversation matters.
The moment I stepped inside, I loved the atmosphere. The lighting isn't too bright and glows softly, so it feels upscale but comfortable. When you think of a lamb restaurant you might picture something rowdy, but Jin 1926 Dasan Branch was nice for a meal in a calm atmosphere.
For a wedding invitation dinner, a setting where you can talk comfortably matters as much as the food. That day the soft lighting made for a lovely mood and was perfect for a cozy chat with someone I hadn't seen in a while.
Besides regular table seats, there were bar seats too. At the bar you sit side by side and watch the meat being grilled, so it seemed like a great date spot. I also thought people who want to enjoy lamb on their own could come without any pressure.
The regular tables were spacious as well, and I heard the seating is set up for anywhere from 2 up to 20 people. So it looked usable for everything from dates to family meals, get-togethers with friends and even company dinners.
Jin 1926 Dasan Branch menu: which lamb cuts can you order?

The menu at Jin 1926 Dasan Branch includes French rack, lamb ribs, lamb loin and lamb chuck flap as single items, plus the French rack assortment and 1926 assortment sets, and distilled soju and kaoliang liquor sets. It's said to be a specialty restaurant using premium chilled Australian lamb.
Before ordering, I looked through the menu. It said they use chilled meat shipped by air freight, and their principle is to sell meat on the same day it's prepared.

The menu offered a variety of cuts, from French rack to lamb ribs, lamb loin and lamb chuck flap. Lamb differs a little by cut in fat distribution, chewiness and flavor, so it's fun to choose to your taste. There were also set menus like the French rack assortment and the 1926 assortment, where you can try several cuts together.

There were distilled soju sets and kaoliang liquor sets too, so people who like a drink with their meal have plenty of choices. After some deliberating, we ordered the lamb ribs and lamb chuck flap, the ones I most wanted to eat. They're different cuts, so I figured we could compare texture and flavor.

To go with the meat, we also ordered bibim noodles (spicy-sweet mixed noodles) and the Jin special rice (진특선밥, gondre and pollock roe rice). I was curious about the Jin special rice the second I saw it on the menu. I love gondre rice (thistle greens rice) and I love pollock roe, so it was a combination I couldn't pass up. Spoiler: I was glad I ordered both side dishes!
Jin 1926 side dishes and stir-fried bean sprouts

The side dishes at Jin 1926 Dasan Branch were pickled radish, kimchi, white kimchi, cheongyang chili peppers and stir-fried bean sprouts, and my favorite was the crunchy, slightly spicy bean sprouts. Refreshing sides like these go well with the nutty aroma and juices of lamb.
While waiting for the meat, I looked over the side dishes: pickled radish, kimchi, white kimchi, cheongyang chili peppers and more. Lamb is charming for its nutty aroma and rich juiciness, so it pairs nicely with these refreshing sides.
The pickled radish was crunchy and fresh, great between bites of fatty meat. The white kimchi wasn't harsh and cleansed the palate. The cheongyang chili was nice laid on top of the meat: its sharp heat added to the nutty flavor of the lamb ribs, cutting the richness and making the taste more distinct.
And the side dish I personally really loved was the stir-fried bean sprouts! They kept that crunchy bean sprout texture with a subtle spiciness. The light crunch in my mouth felt great, and they went really well with the meat. Especially after juicy lamb ribs, a bite of the sprouts made my appetite fresh again. I liked them so much that I kept reaching for them even on their own.
Does Jin 1926 Dasan Branch grill the lamb for you?

At Jin 1926 Dasan Branch, the staff ask how you like your meat done, then grill the lamb ribs and lamb chuck flap for you from start to finish. That day I asked for medium to medium-well.
Finally, the lamb ribs and lamb chuck flap we ordered arrived! The vivid red color and evenly spread marbling caught my eye right away. The meat looked appetizing even before grilling, which raised my expectations.
Lamb's texture changes depending on how done it is, right? The staff first explained the doneness levels and asked whether I had a preference.
They put the meat on the grill and cooked it golden, and just watching it cook made my mouth water. When a light brown color rose on the surface and a nutty aroma spread, I couldn't wait to try it. Watching the meat grill right in front of me at the bar was fun too.
Since I didn't have to worry about grilling, I could focus on handing over the invitations and chatting. That was one reason I felt I'd chosen the right place for the wedding invitation dinner.
Do Jin 1926 lamb ribs taste gamey?

The lamb ribs at Jin 1926 Dasan Branch were golden outside and juicy inside, and by the writer's standard the gamey smell wasn't strong, so the nutty flavor stood out more. I ate them plain first, then with cheongyang chili and stir-fried bean sprouts.
I tried the lamb ribs first. The staff grilled them to the doneness I asked for and cut them one by one into bite-sized pieces. The outside was golden brown and appetizing, and the inside held juicy meat. They really looked delicious.

I ate a piece right away while it was warm, and the nutty flavor and juicy meat the moment it hit my mouth were so good! The outside had that lightly seared nuttiness, the inside chewed tenderly and the juices spread naturally. The more I chewed, the more the deep savory taste of lamb ribs rose up.
The off-putting lamb smell I'd worried about was barely there. Of course there's the natural lamb aroma, but to me the gamey smell wasn't strong and the nutty flavor was more memorable. I think even people who've hesitated because of lamb's distinctive smell could enjoy it comfortably, depending on taste.
I liked the texture too. Nothing felt tough; it had a good bounce and tenderness together, so I savored it one piece at a time. The flavor of the meat itself was so good that I first ate it with nothing else. It was clean yet had a deep meaty taste, perfect for enjoying the lamb ribs as they are.
Next I tried it with a little cheongyang chili on top, and I loved this combo too. The sharp heat of the chili neatly cut the deep richness of the lamb ribs and gave it another kind of charm.

It was good with the stir-fried bean sprouts as well. Adding the crunchy sprouts to the tender lamb ribs made chewing more fun and left my mouth feeling fresher. I thought, yes, the charm of lamb ribs is the flavor of the cut itself.
Lamb chuck flap vs lamb ribs: what's the difference?

The lamb chuck flap at Jin 1926 Dasan Branch chewed more tenderly than the lamb ribs and left a subtle nutty fat flavor. Where the ribs offer bounce and deep meaty aroma, the chuck flap's strength is its softness, so I'd recommend ordering both and alternating.
The other dish we ordered with the lamb ribs was the lamb chuck flap. If the ribs were charming for their nutty aroma and juicy meat, what I remember about the chuck flap is its softer, richer texture. It looked appetizing from the start, with its fat and lean meat intermingled.
The staff carefully adjusted the doneness of the chuck flap too. They cut it into bite-sized pieces so I could pick it up right away. One bite showed a different charm from the ribs. I liked the texture that spread softly as I chewed, and the nutty fat flavor lingered subtly in my mouth.
Cut into bite-sized pieces, the chuck flap wasn't overwhelming but let me feel the rich taste of the meat. It stayed juicy, and the more I chewed the more nutty savoriness I tasted. If the ribs were fun for their moderate bounce and deep meaty aroma, the chuck flap's tender texture was a bit more appealing. Alternating between the two made the difference between them even clearer.
I was glad to have ordered the ribs and chuck flap together, since I got to enjoy different textures and flavors I wouldn't have noticed with just one cut. If you want to enjoy lamb's variety like me, I think it's worth ordering different cuts together.
Whole garlic, green onion and mushrooms grilled with the lamb
At Jin 1926 Dasan Branch, they grill whole garlic, green onions, cherry tomatoes, onions and mushrooms on the grill along with the lamb. At the end, the staff also carefully grilled the meat around the rib bones.
Seeing the meat and vegetables cook together was pretty, and the table looked richer. The whole garlic turned golden, its raw sharpness mellowed and the inside got fluffy, so it was great with the meat. Grilled green onion gets subtly sweet, right? A piece of lamb rib with well-cooked green onion blended nutty juices and sweetness naturally. The onion got tender too and was nice between bites of meat, and the cherry tomatoes refreshed my mouth with their tang.

Midway through the meal they grilled mushrooms too. Their chewy texture and gentle aroma went well with lamb. Eating with all these vegetables meant I didn't get tired of it until the end.
At the very end, they carefully grilled the meat clinging around the rib bones too. The meat close to the bone on lamb ribs is a treat, right? I was even happier that they didn't skip that small part.
What does Jin special rice (gondre and pollock roe rice) taste like?

The Jin special rice at Jin 1926 Dasan Branch is rice with gondre and pollock roe, where the gondre softly balanced the salty savoriness of the roe. Eaten after a piece of lamb ribs, the meat's flavor and the mild rice connected naturally.
Of everything I ordered to go with the meat, the one I personally anticipated most was the Jin special rice. I usually like gondre rice and I like pollock roe, so I was curious the second I found it on the menu. Honestly, I never expected to find gondre and pollock roe rice at a lamb restaurant. One bite, and the two ingredients went together far better than I thought.

First the salty savoriness of the roe spread gently in my mouth, then came the mild, nutty flavor of the gondre. It wasn't just the roe's saltiness standing out; the gondre softly balanced the taste. The gondre's subtle aroma blended well with the rice, so I kept going back for spoonful after spoonful.
And I liked it even more with the lamb ribs. Taking a piece of lamb rib and then the Jin special rice, the deep flavor of the meat and the mild taste of the rice connected naturally.

Tangy bibim noodles to finish the lamb dinner
The bibim noodles at Jin 1926 Dasan Branch had a tangy sauce evenly coated on the noodles, neatly cleaning up the rich taste left after the lamb ribs. Their character differs from the Jin special rice, so I was happy we ordered both sides.
When you eat lamb, the nutty juices sometimes linger strongly in your mouth. I ordered the tangy bibim noodles because I thought they'd go really well then. From the first bite, the sour-sweet sauce whetted my appetite. The sauce was evenly mixed into the noodles, so every bite had savory depth.
The nutty, deep flavor of the lamb ribs met the tang of the bibim noodles in a really nice harmony. If you keep eating only meat, a greasy taste can remain, but one bite of the noodles tidied that feeling up. Since the two sides have such different characters, I was even happier we ordered them together.
Final thoughts on our wedding invitation dinner at Jin 1926 Dasan

Jin 1926 Dasan Branch, where we held our wedding invitation dinner, was satisfying from the food to the atmosphere. The lamb ribs were charming for their juicy meat and nutty aroma, and the lamb chuck flap stayed with me for its tender texture and rich savoriness.
The staff grilled the meat to my preferred doneness and cut it into bite-sized pieces, so the meal was even more comfortable. The side dishes I ordered, the Jin special rice and bibim noodles, were really satisfying too. The Jin special rice with gondre and pollock roe was especially memorable as an unusual combination, and the tangy bibim noodles were great alongside the meat.
And above all, I liked that we could talk comfortably during the wedding invitation dinner. The soft lighting, upscale atmosphere and convenient parking all pleased me, so I finished the meal in a good mood. If you're looking for a lamb restaurant near Dasan Station, especially a nice place for a date or a wedding invitation dinner, Jin 1926 Dasan Branch is worth a look.
