Dong-gu, Busan hagfish restaurant with Korean mint wraps: Gyeongbuksan
Gyeongbuksan Kkomjangeo is a local hagfish (kkomjangeo) grill restaurant at the end of the pork rib alley on Choryang-ro in Dong-gu, Busan. On a Tuesday evening the writer ordered the half-and-half medium portion for two — half salt-grilled, half sauce-grilled — wrapped it in perilla leaves, onion and garlic scapes with young Korean mint leaves (bangailip) from the self-serve bar, and finished with fried rice made in the leftover sauced onions. Even a diner who normally dislikes hagfish was won over once it was eaten in a wrap.
