Date-night bossam and seafood kalguksu in Sindorim: Sonjeong Bossam
In short
Sonjeong Bossam Sindorim Branch is a bossam (boiled pork wraps) and kalguksu (knife-cut noodle soup) restaurant in Sindorim, Guro, Seoul, a 6-minute walk from Sindorim Station Exit 3. On a date with her boyfriend, the writer ordered the small gabrisal bossam and the Bada Haemul Kalguksu (seafood noodle soup), and remembered the chewy, never-mushy gabrisal pork, the kimchi made in-house and the refreshing broth with blue crab, mussels and mideodeok (sea squirt). Sonjeong Bossam is a Sindorim bossam spot she visited for the pork and left loving the seafood kalguksu too.

The restaurant isn't far from Sindorim Station, so it wasn't hard to find. The exterior is tidy and catches your eye as you walk by, and at mealtimes customers kept coming in. Lots of people were also stopping by for takeout, so even though it hasn't been open long, it seemed to already have a name by word of mouth in Sindorim, haha.

What did we order for two on a date?

What we ordered at Sonjeong Bossam Sindorim Branch that day: gabrisal bossam (small) + sea seafood kalguksu + Coke Zero + a bowl of rice, haha.

Side dishes: house-made kimchi and eomuk bokkeum (stir-fried fish cake)
The side dishes were kimchi said to be made in-house, kkakdugi (cubed radish kimchi), eomuk bokkeum (stir-fried fish cake), saeujeot (salted shrimp) and ssamjang (dipping paste). I liked the sides too. The kimchi is made in the restaurant, and it tastes great with bossam. It's so good I think you could just order rice and eat it with the kimchi, haha. The kkakdugi was crunchy and nice to nibble in between. The fish cake stir-fry was surprisingly good: not salty, and mild. With the salted shrimp and ssamjang you can season to taste, and nothing was overly seasoned, which I liked, haha. It felt like they cared about every side dish, not just the main menu.

How does the seafood kalguksu taste?
The sea seafood kalguksu is a noodle soup generously loaded with crab, mussels and mideodeok (sea squirt), with a clean, cool broth. It was better than I expected!! The broth got richer the longer it boiled, and the clean yet refreshing flavor was impressive. I especially loved the dadaegi (seasoned chili paste) that came with it. It isn't aggressively spicy or salty, it just adds a little kick, and stirring in a bit at a time went really well with the cool seafood flavor, haha.
A Sindorim kalguksu spot, so it's a seafood bomb!! haha

Turn on the heat, add the noodles, and set the sandglass; once it runs out, the noodles are about cooked, haha.
The noodles were chewy too, and they soaked up the broth from the seafood, so they were delicious to the very end, haha.

The mussels were plump, and the flavor from the crab seeped naturally through the whole broth. I went just for bossam, but I kept thinking about the kalguksu instead, haha. A dish that anyone looking for kalguksu in Sindorim would be happy with!!

Is the gabrisal bossam chewy or tender?
The gabrisal bossam (pork from the cut next to the shoulder loin) was chewy rather than mushy, clean-tasting with no gamey smell. The dish I was most looking forward to was of course the gabrisal bossam!!! Some places serve bossam with a mushy texture that gets greasy fast, but Sonjeong was different, haha.
The signature gabrisal texture was alive: soft to bite yet satisfyingly chewy, and it felt like you could feel the grain of the meat?!?!!!! No gamey smell, and boiled so it's mild, so wrapped with cabbage it tastes light and healthy.

Eaten with mukimchi (radish kimchi), the crunch added a nice balance, and topping it with garlic and chili worked well too, haha. Personally I prefer this chewy style to mushy bossam, and I think it's a texture that people looking for bossam in Sindorim will like.
Even better wrapped in lightly cooked cabbage, this Sindorim bossam, haha.

Tangy-sweet garlic sauce for the bossam
I don't know if it's Sonjeong's signature sauce, but this garlic sauce was jmt (insanely good) too. The tangy-sweet flavor is addictive, haha.
Is Sonjeong Bossam Sindorim Branch worth a return visit?
If you're looking for a good meal in Sindorim, do stop by Sonjeong Bossam Sindorim Branch! The chewy gabrisal bossam, the cool broth of the sea seafood kalguksu, the not-salty spicy dadaegi, plus the tasty kimchi and fish cake stir-fry made it a really filling meal, haha. The bright, hygienic dining room kept me comfortable the whole time, and it's spacious enough to be good for a family meal or a company dinner near Sindorim Station! Above all, takeout and delivery are available, so next time I want to order it to my studio, haha.
